I have really been craving egg drop soup...does anyone have a recipe for it thats induction friendly? I would appreciate it. Thx

ohhh this is so easy
depending on how much you want you may double this
1 quart chicken stock (any good canned or fresh)
a piece of fresh ginger
soy sauce to taste
1 bunch chopped green onions
1 stalk celery diced up
you bring this to a low boil and then take a couple of whole eggs in a bowl and beat them up
with a big spoon stir your soup so it is swirling then slowly while stiring the soup in a swirl ( I hope this make sense to you?) pour the egg in ...stir and the low boiling soup will make the strands of egg that make it egg drop soup! just serve when the egg strips are cooked this takes no time at all

That is a great recipe and really helps you feel good inside...it's just one of those foods that is soul-filling! Food isn't the evil thing here...my will power is...lol.

so anyone try to make it yet it is????... yummmm...I made it three times after posting just because I had forgotten it until now..I like mine with lots of hot chile oil in it for extra kick....it is absolutely poverty food ..trust me I have been there

Here is another one...
Italian Egg Drop and Parmesan Cheese Soup
Note:Serves 4, Total Carbohydrates: 2
You can add cooked chicken cut into bite-sized pieces to this soup if you want
something a bit heartier. This is very good with a thin slice of lemon floating on top.
Ingredients:
4 cups chicken stock or broth
salt and pepper
2 eggs
4 Tbsp. freshly grated Parmesan cheese
2 tsp. chopped fresh parsley
Heat the stock or broth to a boil over high heat. Season to taste with salt and pepper.
Beat the eggs with the Parmesan and parsley and season with a bit of salt and pepper.
Slow stir the egg mixture into the soup and stir constantly for 2-3 minutes until the eggs float to the top and form tiny “flakes”. Serve immediately.
Another day, in a new weigh!!!

Ohhhh, I love this recipe!!
You can omit the cornstarch all together or use Xanthan gum for thickening.
- 4 cups chicken broth, divided
- 1/8 teaspoon ground ginger
- 2 tablespoons chopped fresh chives
- 1/4 teaspoon salt
- 1 1/2 tablespoons cornstarch
- 2 eggs
- 1 egg yolk
- Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan. Stir the salt, ginger and chives into the saucepan, and bring to a rolling boil. In a cup or small bowl, stir together the remaining broth and cornstarch until smooth. Set aside.
- In a small bowl, whisk the eggs and egg yolk together using a fork. Drizzle egg a little at a time from the fork into the boiling broth mixture. Egg should cook immediately. Once the eggs have been dropped, stir in the cornstarch mixture gradually until the soup is the desired consistency
