i am in need of flax!!!! i am new to baking and am overwhelmed with all the flax recipes i have read. i need to eat at least one daily and am hoping for something sweet and filling. i am trying to avoid artificial sweeteners (splenda) as i've heard the effects are questionable and can cause cravings and stalls. i've inquired about stevia at the healthstore and was further confused as there are powders and liquids. please help me find a yummy muffin that i would look forward to eating .....thank you!

there are flax breads in the recipe section, and you can use stevia in them, I use stevia in my sweet flax bread all the time. I have not tried using the bread recipe in a muffin tin, but see no reason it would not work...
personally I just bake the loaf and slice in half, freeze half since I only use a slice a day...also, liquid Stevia is the easiest for baking. Very intense, you just need a couple Tbsp but have to taste the batter to gauge..

make sure you get a good quality stevia or you will get a weird taste too. Some folks can detect it and some foklk can't even in the top quality stuff.
I love stevia and use the liquid in cooking and the leaf stevia in sprinkled sweetnerby the book atkinseer

I'm a member of the Splenda challenged folk who can't tolerate it so i only use Stevia but I don't eat much sweetener anymore period.by the book atkinseer
