  • Need Lunch Ideas ok for a cooler.

    Hello everyone...

    I need lunch ideas. I clean residential houses and have no access to a microwave. I can clean their microwaves, but not use them. So it will have to be something that is ok to put in a cooler or not. They also need to be induction friendly because I just started Atkins for the 3rd time *got a little off track* yesterday. I KNOW that Atkins works.. that is why I am doing it yet again.. hopefully this time I won't fall off the wagon and give in to the carbs. Anyhow.. ideas for lunch on the go would be great if any of you have some I'd REALLY appreciate it! :yes

    How about ham and cream cheese roll ups?

    Or even cold chicken legs? (I used to have cold chicken legs quite regularly.

    You can also shred up a cupful of lettuce and take it in a tupperware container to eat with your chicken?

    Just a couple of thoughts.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

        Different peoples roll ups vary.

        But for mine, I spread cream cheese on a slice of ham (wafer thin) then roll them up and stick a coctail stick through them.

        I tried it a few weeks ago with a little variation. I mixed some cream cheese up with some prawns, added some pepper and put a "dollop" of the mixture on some smoked salmon sheets. Then folded them over and again sticking a cocktail stick through it.

        Very messy to eat, but very tasty.

          I put a pickle spear in my ham roll ups! yum
          also you could make egg salad or tuna salad as long as you are keeping it in a cooler, deviled eggs are great and easy,
          diced up chunks of cheese and chunks of meat like salami
          I like cold leftover steak sliced over a salad and topped with blue cheese dressing this travels well.

            Chicken Salad
            Parmesean breaded fried chicken fingers (they are delish cold!)
            Shrimp salad
            Shrimp w/ homemade cocktail sauce
            Pimento Cheese and Celery or Cream Cheese and Celery
            Hard Boiled Eggs
            Deviled Eggs
            Egg Salad
            Sliced Jicama w/ lime juice and chili powder
