  • Chicken Legs... would this idea work?

    I was thinking of something and wondering if anyone else thinks this would work. I have a bag of chicken legs in the freezer. They of course have the bone. How would I go about breading them and baking them? What if I use bbq flavored pork rinds and crused them up? How would I get the crumbs to stick, just egg? How long would I bake them? Thinking it might taste good if I could figure out a plan to get it to work. Suggestions please.

    You've almost got it already. You want to take the chicken legs out of the freezer and defrost them (overnight in the fridge is best). Then, go ahead and dip then in an egg/water mixture (about 2 tablespoons water to 1 large egg), then dip them in the pork rind mixture. I'd spray PAM on a cookie sheet and place the chicken on there. I'd bake them at 350 for about 45-60 minutes -- make sure they are cooked through.

    An alternative is to dip them in a ranch or other creamy dressing, then roll them in parmesan cheese (the green can kind). That adds a lot of flavor and people have been raving about it for awhile on ADBB.

    One more option for you -- get a large ziplock bag or container with a snap lid, put the chicken in then pour on some Carb Options Italian dressing and let marinate for an hour or two. Then bake as above.

      I cook a batch of chicken legs every week, cold chicken legs is a favorite snack for me. But I don't worry with breading, I just sprinkle with chicken seasoning or cajun seasoning and roast them. The skin gets crispy and with the seasoning is very tasty.

        Roast them.. you mean like in the oven? How long do you roast them for?
