I'm trying to find a coconut pie recipe that was in Atkins book in the 70's. The crust was almost a "regular kind" Can anyone help? I've looked everywhere on this site and Atkins site ---- THANKS

This is the coconut cream pie recipe in the 1974 cookbook. Before you bake it, you should calculate the carb count on it. Good luck. Recipes that start off "Place coconut in a flame proof bowl. Heat Cointreau and ignite. Pour over coconut. (Flames will be high)" make me question the overall safety of the thing!
Coconut Cream Pie (Dr. Atkins Diet Cookbook 1974)
1/2 cup coconut (unsweetened)
1/8 cup Cointreau
1 tablespoon butter
2 1/2 cups heavy cream
1 envelope unflavored gelatin
1/4 cup cold water
2 tablespoons white sugar equivalent
4 egg whites, room temperature
2 teaspoons vanilla
1 Meringue shell, optional
Place coconut in flame proof bowl. Heat Cointreau and ignite. Pour over coconut (Flames will be high)
Heat butter in skillet. Add coconut and lightly toast it.
Remove 2 tablespoons toasted coconut and set aside.
Add 1 cup heavy cream to skillet. Simmer.
Sprinkle gelatin over cold water. Mix well. Add to cream. Simmer and stir until it begins to thicken. Remove from heat. Add 1 teaspoon equivalent sugar substitute. Cool.
Beat egg whites until stiff with 1 tablespoon equivalent sugar substitute. Fold egg whites into cool cream mixture.
Pour mixture into pie plate sprayed with imitation grease. Refrigerate until firm.
Beat 1 1/2 cups heavy cream with vanilla and 2 teaspoon-equivalent sugar substitute. Pile on top of firm cream mixture. Refrigerate for at least 2 hours before serving. Sprinkle with remaining coconut.
Meringue Shell
4 egg whites
pinch salt
4 teaspoons crème de cacao
Preheat oven to 250.
Place egg whites and salt in bowl . Beat together until frothy. Gradually add crème de cacao. Continue beating until whites are stiff, glossy, and stand in stiff peaks.
Grease 6 muffin cups. Fill cups with meringue, hollow out top with back of spoon.
Bake in 250 oven for 1 hour.~Megs~

Lordy, Lordy ! ! I DID NOT do the flame thing with the liquer! ! ! My memory is coming back -- I just toasted the coconut and I also added 1 or 2 of the yolks to make it more like a custard. The pie shell was made with cottage cheese I think, is there some other pie shell / crust in that book? THANKS, THANKS, THANKS for the recipe

The only pie crust mentioned in the Diet book and the companion cookbook is the meringue thing I posted. Are you sure it wasn't another book (or other decade?)~Megs~

Hope this is what you are looking for.Yellow Pie Shell
3 egg whites
1/2 teaspoon cream of tartar
1 pkg Sugar Twin
2 egg yolks
2 tbs cottage cheese
Pam Spray
Preheat oven to 300 degrees
Separate eggs. Beat egg whites with cream of tartar and Sugar Twin. Beat yolks lightly. fold cottage cheese and yolks into stiff whites. spray pam on teflon pie plate, pour in mixture, and shape to comform to the plate. Bake for 1/2 hour.
Total grams 3.8
Total grams with carbohydrate-free sweetener 3.0
