  • Homemade Mayonaise

    Just wondering about the safety of eating the homemade mayo with raw egg in it. Does the vinegar kill any thing we would have to worry about? Thanks looking forward to making this for my tuna salad.

        No fear!

        Just break the egg in another glass .... and keep the mayo always in the fridge. If it´s too thick you can add 2 tbsp. water! it will be a perfect dressing .... you may also add some mustard ...... smashed garlic .....

            Okay, so tell me how to make it??

            I grew up on my grandma's homemade mayo and I could just KILL for some right now.

            I know she used oil, eggs, dry mustard...and not sure what else....

              Ingredients:
              1 1/2 teaspoon Lemon juice
              1 large Egg
              1 cup Oil olive oil is good
              1 tablespoon Vinegar
              1/2 teaspoon Salt
              1/4 teaspoon Dry Mustard
              1/8 teaspoon Paprika
              1 dash Cayenne Pepper
              1 cup Salad Oil
              1 tablespoon Lemon Juice

              Directions:
              Place the egg and lemon juice (or vinegar) in a blender. Blend at a high speed until the mixture starts to lose some of its yellow color and become a bit whiter. Pour the oil in slowly (in a constant stream over the course of about half a minute). Keep the lid on the blender as you do this (just lift the corner to pour in the oil) or else it will spatter everywhere.

                Thanks Heidi, gonna make me some home made mayo. Never thought about using olive oil, but I bet that would be awesome.

                I'm also going to go next door and get some fresh egg from my neighbors, my grandma always made it with fresh out of the coop eggs and I'm sure that will make a difference too.

                  yes it does matter because fresh out of the coop seem to have bigger brighter yolks! I buy from a friend at work until the farmers market opens in April then I buy from a lady there who has chickens raised on the produce from the market..my God those eggs are wonderful... I love home made mayo ..sometimes I add stuff to make it garlicky or whatever but it tastes so good just like it is ..with giant steamed artichoke I am busy forever!!!

                    Still havent bought my new blender yet, can I make mayo in my food processor? Or my kitchenaid mixer?
                    Any flavors that resemble Hellmens/bestfoods? Do you just store this in an airtight container? and how long does it keep?
