  • Pad Thai w/ Shirataki?

    Well, I've found a few Thai recipes ... and several people have posted about using Shirataki noodles ... but I've only found one Shirataki Pad Thai. (Star, did you ever make that recipe?) I'm having a major craving for some super-spicy shrimp Pad Thai, so any ideas are welcome. Seriously, I have an asbestos tongue -- the spicier the better.

    I don't know of any preflavored shiritaki pad thai, but at my local asian grocery store they sell pad thai paste to mix with noodles, which is relatively low carb.

          Hi H20hhh,

          I'm not sure which recipe you're talking about, but I posted a recipe for low carb pad thai using the shirataki...I love it! Possibly it's one in the same! You'd just have to trade out the chicken for the sauteed shrimp.

          And my favorite variation (if you're beyond Induction) is to use 2 Tablespoons of creamy peanut butter in place of 2 Tablespoons of veggie oil.

          I've used up to 1/2 teaspoons cayenne and it's nice and spicy! Normally just 1/4 if I'm sharing with my DD!

            Thanks, Sheshy. I'll search for your post. And I'm on rung 6, so I can use the peanut butter!

            Proof positive that so many things can be made low carb, there's no reason to cheat!

              hey i'd love to see the recipe...pad thai is my faaavorite and that is probably one of the hardest things about this wol for me! i could eat it 3x a week!

                Here's the recipe, we really enjoy it!

                Pad Thai
                Made Low Carb
                (adapted from an Emeril Lagasse recipe)

                2 pkg of the soy/konneyaki noodles
                1/4 cup fish sauce
                2 tablespoons rice wine vinegar
                2 tablespoons splenda
                2 chicken breasts (or desired protein, pork or shrimp would be good too)
                1/4 to 1/2 teaspoon cayenne (or to taste)
                1 tablespoons peanut oil (I've used veg oil also)
                2 tablespoons peanut butter
                2 tablespoons minced garlic
                2 large eggs, beaten
                2 cups bean sprouts
                2 cups sliced green onions
                1/4 cup chopped roasted unsalted peanuts
                1/4 cup minced fresh cilantro
                1 tablespoon fresh lime juice
                Drain the konneyaki noodles, rinse with cool water and then drain, set aside. In a small bowl, combine the fish sauce, vinegar, cayenne and splenda, and stir until the splenda dissolves. Set aside. In a wok or large saucepan, heat the oil over medium-high heat. Add the garlic, and cook, stirring, for 30 seconds. Add the chicken pieces and cook, small pieces only take about 10-15 min total. Transfer to a plate and cover to keep warm. Add the eggs to skillet and cook, stirring, until just set, about 45 seconds. Add the peanut butter, allow to melt, then add sprouts, onions, fish sauce mixture, and noodles, and cook, stirring, until warmed through. Add the chicken, and peanuts, and cook for 30 seconds. Transfer to a serving platter and toss with the cilantro and lime juice. Serve immediately.
