  • Looking for a chocolate cheesecake receipe

    Hi All,
I'm looking for a chocolate cheesecake receipe that uses cocoa. I know you're supposed to mix the cocoa with butter and sugar (sugar twin for me) to make the equivalent to chocolate squares, but I haven't done that for decades and have no memory of how to do it. Also would prefer to use Philadelphia cream cheese Many thanks to anyone who can help. Cheers, Castoridae

Here's one that uses bakers chocolate - just sub the sugar for a sugar substitute (I'd use splenda) and leave off the crust or if you're on the nut rung you can make a nut crust.

The only problem with your recipe is that the semi-sweet chocolate would have sugar in it.

This link had the cocoa-to-baking chocolate ratio:

You'll need to scroll past the brownie recipes for it.

Oops, guess you should just use unsweetened then!

But semi sweet chocolate would have at least some sweetener in it, and the substitution method doesn't mention additional sugar. I would imagine you would end up with a very very bitter cheesecake.

You would need to adjust the total amount of sweetener to get the desired sweetness you want. Which is good for us, because then you can control the sweetness and the number of carbs in the cake.
