  • Any good Zuccini recipes out there?

    I was wondering if anyone had any good zuccini recipes to share. I am in the induction period and my husband has just joined me too, so i am going to stay with it longer than the 2 weeks, cause today would be my 2 weeks. Anyway, i really like zuccini, but would love it flavored up a bit. H

    Also, has anyone ever tried those Carb Options tomato sauces from Ragu? It is like 5 net grams of carbs per 1/2 cup and uses splenda too! I bought a few jars cause they were on sale, but never tried them before. I love pasta sauces, so i am so afraid that they will ruin it for me, cause you all know how some diet foods just don't taste right.. LOL. Anyway, don't worry, i am not using it for pasta, maybe some chicken with cheese on top, kinda like a chicken parm but without the breadding.

    Zucchini ribbon "noodles": thinly slice the zucchini into long ribbons. Saute and mix with grated Parmesan cheese.

    Zucchini-tomato-mozzarella casserole: Slice the zucchini into rounds or into long slices. Slice the tomatoes into round. Put alternate layers of zucchini, tomato and mozzarella in a baking dish, sprinkling the zucchini layer with a herb mixture of parsley and basil. Bake.

    Zucchini pancakes: shred the zucchini, mix with a little salt, put in a colander and let it sit for about 20 minutes. Squeeze the excess water from the zucchini shred. Mix with grated onion, egg, and cook like potato pancakes (latkes). If you want add a fiber supplement like Benefiber or psyllium husk to the mixture.

        I bake it for about 30 minutes, but I'm really bad with the foods I toss together on the spur of the moment, so I usually end up sticking a knife into it to make sure the vegetables are tender.

          I usually keep it simple and just sautee with butter, garlic, salt & pepper. Or maybe onions and bacon bits. I've made zucchini fries before - coat thick sticks of zucchini with egg, dip in either crushed pork rinds or shredded parmesan (or both) and deep fry until golden brown.


          5 pounds away from a little reward - pedicure!!

              I cook "pisto" every week!: onion, tomato (peeled), green pepper and zucchinis. You first fry the onion in olive oil and then you add the rest of the veggies and salt and black pepper. Cook them for an hour (low heat). It´s delicious.

                Pau, that looks yummy. I will have to try that (minus the green peppers).

                My favorite way to cook zucchini is so simple Im embarassed.... Split it in half, little bit of olive oil and then straight onto a smoking hot grill or grill pan. Its gotta be a VERY hot pan. Serve it with sea salt over top and its so simple and light I love it.

                  I also like zucchini like that!!!! but on top I put some Parmesan cheese!!!! LOVE IT!

                    Have you all ever had caramelized zucchini rounds? Slice the zucchini into 1/4 inch rounds, then heat olive oil in a frying pan. Add 2 cloves of garlic that have been sliced in half. Cook until light brown then remove. Add the zucchini so it covers the pan in a single layer, then let it cook, until the zucchini is a dark golden brown, flip and cook the other side until golden brown. Remove the zucchini and let it drain alittle on paper towels and serve.

                      Wow, there are sooo many ideas here. thanks to all for helping me. I can't wait to have my zuccini. I am waiting for my tomatoes to ripen, so i may save them for tomorrow. Thanks again.

                        Have you ever thought about stuffing them (can just save the pulp for soups, casseroles, and such or dice for salads)? The ideas are endless, scoop out the middle and fill them with whatever you want.. I made some once with canned salmon + Mayo then baked it till tender for the hubby.. no idea what it tasted like but he liked it /shrug LOL

                        As far as that spaghetti sauce, have you tried the spaghetti squash? Its a pretty good alternative to spaghetti IMO. My 4y eats it.

                          I never tried the spagetti squash before, thanks for letting me know about that. I was not going to use the sauce for pasta though, i was just going to use it as a topping on some chicken or something and did not know if anyone has tried it.

                            We went to Carrabbas over the weekend for my daughters bday and there vegetable of the day was zucchini pitchi puchi (sp?). I asked the waitress what it was and she said it was sauteed in olive oil with basil, a little tomato, garlic and salt and pepper. It was awesome!!!
