Hi there. Instead of stuffing, try cutting them up, spread evenly over a cookie sheet, add one or two tablespoons of olive oil and roast on high temp. Don't overdo the added oil as they will steam instead of roast. I have done this to the point of boredom and all my friends come around and beg me to repeat time and time again, like I am some great chef!!!
The colours of the peppers is inciting enough,wot better way to eat good stuff!

Yumm.... or grilled chicken & pepper kabobs.... so good and looks wonderful.
Don't ya know, everything is better with a stick
BUT... be careful I learned the hard way that too many peppers and you'll go over your 20 carbs per day. Check with www.fitday.com carb counter first, that's what I always do.

Thanks everyone for the ideas
Started induction this past Monday...cheated just a little last night (but somehow still went down 1/2 a pound this morning) and am trying to get through it. Read on another website about taking the cla/gla combination which supposedly has helped many lose inches (fairly quick) along with eating low-carb and healthy. I'm 147.5 now and ideally would like to get to 125. Really want to make a dent in the next couple weeks so working out alot on my treadmill too. Wish me luck and thanks again!

I make stuffed peppers (and stuffed tomatoes!). Basically, I use a meatloaf mixture (without any breadcrumbs or other fillers), and loosely pack that into the veg. The breadcrumbs are in those recipes to add moisture and tenderness to the meat mixture. That can be easily copied by adding some sauteed chopped celery or a mix of sauteed chopped celery and mushrooms.
