Coconut & Chocolate?

Anyone have a recipe for unsweetened shaved coconut and Bakers Unsweetened Chocolate? I'm planning on trying for a chocolate macaroon, but haven't had the time to experiment. This weekend has turned hectic all of a sudden.

Choconut disks

1 pkg unflavored gelatine
1 tbs boiling water
l cup heavy cream
1 oz cream cheese
1 oz unsweetened chocolate, melted
10 splenda packets

Soften gelatin in water. Add all ingredients into a blender and blend well. Chill for 10 minutes and spoon onto parchment paper, sprinkle with unsweetened coconut and freeze. Pack in an airtight container.


For a quick chocolate fix try melting the chocolate, mixing in splenda to taste and stirring in a couple spoons of coconut. Let set in frig.
