i am trying to experiment with stevia or stevia plus fiber recipes... any suggestions ...tried and true recipes.

Stevia works great in bread baking, no aftertaste at all that I can find. But I have no idea of amounts, and in some foods sugar helps to 'bind' the ingredients, so you obviously won't get that effect with the Stevia. When I bake my flax breads, experimentation just by tasting the batter led me to the amount I use, I use the bottle with the dropper and one loaf uses 4 droppers full, as an equivalent to 1/2 cup of Splenda, but these are my very rough estimates....
