  • Leftover ham?

My Mom sent me home with a big chunk of ham today after Easter lunch. Any good ideas about what to do with it. We had a ton left as my sister says she had stopped eating pork. She read where pork is back because a pig does not have sweat glands so all the toxins are left in the meat when it is prepared. Has anyone else heard that? Should pork be avoided? I like it! Help!

    Re: Leftover ham?

I have never heard anything about pork being bad for you. In the media, they say there is a problem with nearly everything you eat. (well they do in England anyway). Beef is bad, chicken is bad, fish is bad blah blah. I don't agree with that. And if you took note of all you read, you wouldnt eat a thing.

As most of the regular posters will testify, I eat pork a lot. Mainly in pork chop form. No problems here.

if you are a Muslim, Hindu, vegetarian or an observant Jew then pork is not considered a clean, halal or kosher meat ..but if you eat meat in general then I would not worry about it ....pigs get rid of toxins or they would not be able to live!!!

Layer Ham slices, vegis,(I use asparagus, broccoli, and or califlower) and pour over a cheese sauce. I like cheddar melted with a little butter and cream. Bake until it bubbles.

My mom used to make scalloped potatoes with leftover ham or smoked sausage layered with the potatoes ... so how about Betty's (ttdriver) scalloped turnips recipe with ham? Something tells me that would be good!

I have never eaten a turnip in my life. I will have to see about getting some at the store.

              Re: Leftover ham?

This is a fairly boring idea, but DH and I do this when we get ham donations from my parents. We cube the ham up to put on our salad. Or we put the cubed ham in omelets. Or we fry it in a pan with some cabbage and seasonings.
No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

Yea, omlettes are a great way to use leftover ham, or even heat a slice up to go with your fried eggs! I like it in salads as well! Or even chop some up and bake it into a nice quiche!

I'm having leftover ham for lunch today. Just plain. I cubed some up in a frittata for breakfast yesterday. We had it for dinner Saturday night with roasted brussels sprouts and scalloped turnips. Omigosh!!!! Heaven on a plate! (And I don't even like ham much but dh picked out a good one - if that's what pig sweat tastes like then bring it on!!!)

                    Re: pigs and sweat glands..

Sweating is a way for your body to cool down. Most toxins are removed from your body via urine.

Pigs don't have functional sweat glands, but they keep themselves from overheating by seeking cool places. http://www.depts.ttu.edu/porkindustr...OOR%20PIGS.htm
The trouble is, the pig does not have functional sweat glands on its skin.

The pig has a form of sweat gland on its skin, but they do not work. The pig can lose a small amount of water, and thus heat, through passive diffusion through the skin – but not much. So instead of sweating, the pig uses behavioral thermoregulation to cool itself. Behavioral thermoregulation is actually a more powerful mode of heat loss than is sweating – and the pig does not become dehydrated. Behavioral thermoregulation is an effective means of cooling as long as the animal has access to cool substrate.

Sows in fact prefer a cool surface to lay on (Bull et al., 1997). They actually preferred conductive cooling to other forms of cooling (water or cool air). Thus the domestic pig seeks cool surfaces and would be comforted by cool surfaces both by reducing heat gain (by exposing their body surface to cool rather than warm surfaces) and by the cooling effect of the water and mud. Understanding that sows seek out cool surfaces rather than wet surfaces during warm weather should help to manage the sows better.

This pig factoid of your sister sounds like the typical misinformation PETA would put out.

Anyhow, back to leftover ham recipes....

I cube ham, toss in the food processor with alittle chopped onion and celery, mayo, cayenne pepper and a pinch of ground mace. Process it until smooth. I use that paste as a spread for veggies: celery, pepper strips, roll in lettuce leaves. Or use alittle to flavor devilled eggs: mash the yolks into some of the paste and spoon into the egg whites. It is also delicious as a filling for omelettes.

If you nix the mayo you can add it to some ground pork and bake it like a meatloaf.

If you like split pea soup, click the link in my siggy: that's my personal webpage. Look in the "My Recipes" link and you'll find a recipe for an Induction friendly mock split pea soup, that uses frozen green beans.

Ah, I knew the little PETA girl had her facts wrong. She is one of those skinny minnies who starves herself and follows all the diet fads. Gotta love her since we are sisters, but good grief!
