We're having a BBQ this weekend for my dad's birthday, and I think we have the menu figured out (it's going to be very simple per my dad's request, probably cheeseburgers and brats 'n assorted salads 'n stuff) but I'm stuck on appetizers. Quite a few of the guests are watching their carbs so I wanted to have a few appetizers that are low on carbs, but not outrageously expensive or difficult to make. Help!

do Korean style California rolls
really easy just julliane each of these and put each pile on a tray in a circle
a pile of carrots
a pile of diakon
some green onions
do an egg pancake (like inside kimbob) and then juilliane it
you can have some crab schredded up
then have a stack of NORI on a plate cut in half and toasted with sesame and seeds (you know this I bet
)
in the middle of the veggie piles (that should be arranged on a tray in a circle) put a bowl of dipping sauce that has soy and wasabi imxed to taste with a little ginger
each person helps themselves by grabbling a piece of nori and filling it with a little of each then dipping and eating
it is low carb, low calorie low fat so anyone who follows any eating program willl be happy with it ....

Veggie tray for sure!
Stuffed mushroom caps, you can do them with sausage or crab but of course the crab will be a little more expensive.
Cheese and sausage tray with olives and pickles.
If you guys like hot stuff try the Firecrackers recipe, they're delicious!

It's already been said, but devilled eggs are mega cheap and no one makes them anymore (except us low carbers) so they are always a hit and disappear fast. You can make a few dozen for under $5.00.Female, 46yrs, 5'3"

I've noticed that too. When I was a kid, we had a class cook-out/picnic with hamburgers, hotdogs, potato salad, coleslaw, 1 type of cake and 2 different cookies. One of the kids brought a two trays of devilled eggs. Everyone gobbled those up quickly. I had to attend a similar function for one of my godchildren last year and there wasn't a single devilled egg in sight (though there were 5 varieties of brownies, at least 10 kinds of cookies, and 1 fruit salad.) Anyhow, following MoG's spicy food theme....you can buy jalapeno peppers, split them in half length-wise, remove the seeds and the ribs, then fill the peppers with tuna salad, chicken salad or crab salad. If you don't like spicy food, look for those sweet banana peppers and do the same thing. If you can't find sweet banana peppers, buy a variety of sweet bell peppers (red, yellow, orange, green), slice them in halve lenght-wise, then slice the halves into quarters so you get square-ish shapes. Then fill them with tuna, chicken or crab salad.~Megs~

Yep, I have two big deviled egg plates that I fill and take to all the parties I'm invited to, they always fly off the plate! I like to put baby shrimp and crab meat in mine when I have the extra cash. But even just the old standby recipe disappears like hot cakes!

I've seen a rubbermaid devilled egg container. It was rectangular and had a lid.
I suppose if you can't find one of those things, you can put them into a lidded container and use aluminimum foil as dividers---take a sheet of foil, roll it up and place between a row of the eggs. Maybe even a clean tea towel would do the trick or if you have dried beans (like split peas or navy bean), you can pour them into the container and nestle the eggs into it?~Megs~
