  • Cinco de Mayo

    Our office is having a potluck for Cinco de Mayo. Im still trying to decide if I want to participate. (as a rule, I dont cook for people I dont like. and yes there are a few in my office that I cant STAND!)

    So.... if I DO decide to participate Im at a loss for what I want to take the time to prepare. I could always make my taco salad and bring it in. Thats very legal for me and I wouldnt even buy chips for the ingrates. (its also one of the favorite things I make). I have made enchiladas before for work and they are ALWAYS a huge hit and never have leftovers. Problem with that, I wont eat them because of the tortilla. I have a recipe for a cucumber cilantro salad that is FABULOUS (and legal). Problem there is that its all I know I could safely eat. (I dont eat coworkers food because I dont know how its prepared with regards to sugar etc. some of the folks are on low fat diets, Im the only lowcarber in the office. And theonly one losing weight )

    Anyone have any suggestions?

    make the enchiladas for everybody and save some for you with low carb tortillas.

      You have GOT to be kidding!

      Are you saying that's the only Atkin's friendly menu item you could add to a potluck that you are able to eat? (I can't even fathom having nothing but that for more than 1 meal).

      Devilled eggs - Cubed cheese, deli meat, veggies & L/C dip platter - Tossed Salad W/oil & vinegar - Diet soda or Flavored water - I'm wasting my time here; check the book or browse this forum for choices... Or, if there's NO ONE you wan't to share with, take plenty of something only you will WANT to eat, and take the leftovers home.

        lol Susan. I meant that if the cucumber salad was what I brought, thats all I could have of our potluck. (Id bring myself tuna or something to eat, I wouldnt starve LOL). I dont usually eat food that someone else prepares because I dontknow how its made. (with friends its not a problem ,they know what I can eat. at restaraunts, I request my food be made a certain way).

        Maybe Ill bring a serving of taco salad in for myself and cucumber cilantro salad for the rest of um. Kill 2 birds with one stone.

          well if you really like them you can make fajitas and eat yours tortilla less.

          I make a baked chicken with lime juice jalapenos roma tomatoes cilantro and tequilla last night. you fill the pan with the chicken pieces pour in the ingredients that have all been mixed together cover and let marinate for 30 min and them bake in oven till chicken is done. remove chicken from pan and reduce the liquids to make sauce. I pureed it to give it thickness with my stick blender and poured it over the chicken pieces. it is hot spice limey and tequillia flavored but the alcohol cooked off. you can leave out the tequilla if you want Ihave before

            Cook something you can eat and enjoy eating. For example, you like seafood? Make a cerviche. Granted some people won't eat it ("Ummmm...whaddya mean the lime juice "cooks" it?"), you'll have something perfectly yummy and perfectly edible to eat.

            PS Share the Cilantro Cucumber recipe please

              I brought fresh salmon ceviche to my work one time for a pot luck and there was not a bit to be had when people started tasting!!!! OMG with fresh spring run salmon it is to die for...

              if not bring a jicama salad all you need is jicama sliced, lime chile and salt to taste ...yummmm and very authentic.... make/buy salsa and just put some frozen small precooked shrimp in along with some extra cilantro and lime ..and it is Mariscos

              what else ...oh GUACAMOLE!!!!!!! with sliced veggies

                2Big, that sounds YUMMY!!! I wont make it for them but Ill make that for ME sometime!!!

                Heidi, the guac sounds yummy. I love guac and would eat it up!! That goes on the list

                Megs,the ceviche is a great idea and I know EXACTLY who wouldnt eat it! lol. what a temptation!!


                And for you (and everyone else) Megs... my Cilantro Cucumber Salad
                2 cucumbers (the English/hothouse ones work best since the seeds are much more agreeable to most tummies)
                2T fresh lime juice
                1t chili powder
                1/4 t salt
                1 T chopped fresh cilantro

                Peel the cucumbers, slice lengthwise into quarters and then into 1 inch chunks. Toss in large bowl with lime juice, chili powder and salt. Toss to coat. add cilantro and refrigerate until chilled.

                (thats the original recipe. I always add more cilantro because I have a VAST love for it. same thing with the chili powder, I add about another teaspoon worth because I like a little more heat. This salad is very light and refreshing and perfect for hot summer days.)

                  I like the idea of bringing your own tortillas. We went to Azteca for a birthday dinner and I brought my own tortillas in a freezer bag in my purse. Everyone looked at me like I was nuts, but I ordered myself up some fajitas and munched happily away. Maybe you could grill up some fajita fillings and bring regular tortillas for everyone else and the LC ones for you?

                  Though I don't know how "Mexican" this is - the last party we had I made bacon wrapped jalapeno poppers, omg so good. Just make the poppers like usual using your favorite filling (mine had cream cheese, shredded cheese, and herbs/spices) but instead of breading they get wrapped in bacon, secured with toothpicks, and grilled. Crazy good!

                    Thanks for posting the Cucumber Cilantro Salad. I am a lover of cilantro also. This is going to be my salad today for dinner. Mexican food is my favorite --so thanks for all the ideas.

                      Its not really a Mexican dish, but I have taken Mexican Meatballs to a pot luck and they were a hit. You just mix hamburger meat with taco seasoning and an egg, then you make meatballs but inside each one you put a cube of cheddar cheese. Bake them and then put them in a crock pot with enchilada sauce. I bring the crockpot and a bowl of sour cream on the side for dipping! There are never any leftover!

                        So tomarrow is D Day. I THINK I decided what Im going to do. I think Im going to make Heidis suggestion of Marsicos. (and tell them its ceviche! bwaaahahaha. ). (one of them REALLY honked me off today and I know she wont eat ceviche. She also HATES avocado-whats that tell ya about a person- so Im thinking Ill have to add it to the marsicos. ahem.)

                        So Im going to make a beautiful pico de gallo and add some small salad shrimp, sea salt, lots of cilantro, lime juice, cayenne and pray that its beautiful. I might have to make some guacamole just because I love it. (oh and Im bringing a lil taco salad for myself so I dont feel deprived. who could feel deprived with gorgeous pico and guac though!!!)
