    You know I have never made a quiche so I don't know the ingrediants. I know there are lots of variations. Does anyone have a good recipe for atkins?

    I made this tonight

    I made this tonight and it turned out pretty good!

    Crustless, Low Carb Quiche
    4 eggs
    1 cup heavy cream
    1/4 cup minced green onion
    1/2 cup frozen spinach
    5 strips of cooked bacon
    8 oz grated swiss cheese
    3 leafs of fresh basil finely chopped (optional)
    1/8 tsp cayenne (optional)
    1 clove garlic minced
    4 medium mushrooms sliced
    1 tbsp butter

    You can also add ham, feta, parmesan, flax seed or artichoke hearts to enhance the flavor.

    Mix eggs, cream, cayenne in one bowl. In another bowl mix onion, spinach, bacon, swiss cheese, basil, garlic, and mushrooms. Melt butter and coat the pie pan with butter. Add all the contents of the second bowl to the pan and then add the contents of the first bowl.

    Bake at 350 for 40 minutes and let stand 20 minutes before serving. 8 servings.
