Applesauce?

  • Applesauce?

    DH misses it terribly, and I want to keep him from eating junk, so I wanted to see if you all had any ideas how I could make some homemade low-carb applesauce... do you think chayote squash would work? Anybody tried this?
    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

    I like choyote and it might work. Lots of folks use jicama as an apple substitute. Tell me how the squash works

      I don't know about applesauce, but I have a zucchini pie recipe that has sugar in it that tastes just like apple pie. I'll try to find the recipe and tweak it to see how it tastes. If it's good, I'll post again.
      June Goals
      1. Continue with water
      2. Use bike more (3x per week would be nice).

        Oh my goodness... zucchini pie that tastes like apple--oh yes, do share. I love zucchinis and I love apple pie!

        I'm going to play with my chayote squash today and see how the applesauce comes out... I made the "fried apples" last night and it came out beautifully.

          The applesauce is finished and it came out great! I am charging the batteries in my digital camera so I'll take a picture when they're full up on power. Here is what I did:

          Peeled and cut up one chayote squash into small chunks, removing the pit.
          Put chayote chunks into smallish pot with one cup of water and 3 packets of splenda. You could use 2 as well, I think.
          Bring pot to a boil, reduce to a simmer and cover. Cook until extremely tender, nearing mushiness, checking to make sure squash still has adequate liquid and is not burning onto pan (this is the way I cook, lol). Add more liquid if necessary.
          Drain squash with strainer. Use food mill to reduce to fine applesauce, or if you like, just mash with fork to have a chunkier applesauce (I just mashed because I like mine chunky). I added about 1 teaspoon of lemon juice and a teaspoon of cinnamon, which made it pretty acidic and cinnamony, just how I like it.

          And then you have applesauce!

              And did DH like it, since he is the one who was missing it? I have made the spaghetti squash and put butter and cinnamon/splenda mix on it and it has a nice taste similar to applesauce though the texture is not the same. Who says those on Atkins doesn't eat well?

                looks delish.. I can't find any specialty squash here...Jicama or chayote..I am going to a special market soon, hope to find some..

                  Oh yes, DH likes it... though he complains that he misses the processed taste of the store stuff.


                  He is the same about peanut butter too... What are ya gonna do...

                      WOOHOOOOOO!!!! I'd never thought to use the chayote to make apple sauce.

                      I'll be on a mission this weekend!! You guys can bet on that. I love the chayote.

                        I'm so excited I have to post again!!!

                        I just love it that it's a vegetable, and it's like apple, but a vegetable. And it's carb count for a whole squash is 5.69 Net carbs!!!

                              Changing! THANK YOU! I made this tonight...added some guava to it as well! I love it!

                              I used my sweetzfree for the first time though, and got it too sweet. But, its great!!!
