  • Mahi Mahi?

    Does anyone have a good way to prepare unthawed Mahi Mahi in the oven? This is my first adventure into preparing/eating this fish. Thanks!
    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

    oh honey sorry I missed this do you still have the fish?

    basically I think less is more with fish can you thaw it first then broil it with olive oil a bit of lemon, salt and pepper? that would be all I would do ....

    or if you wanted to even better is to do the same dressing and toss it on a grill or in a skillet
    the best thing in my opinion is ot sear it gently then just cook it through ...do not over cook or it dries out ...a little rare is ok with this fish ...

    let me know how it turned out

    oh here is one more my son loves

    wrap the fish in parchment paper with a dab of butter and some salt pepper and slice of lemon bake at 450 for ten minutes

        Hey thanks... yeah, it's still in the freezer. I've wanted to try it for some time. I'll let you know how it comes out for sure!

            yeah, definitely thaw first. then you can just rub some blackening spices on it and cook it on a fry pan...mmm....

              I love mahi mahi....fresh is best, but if you can get it any way...it's good!

              Definitly thaw it out...it don't think it would take too long even, in the fridge over night is best, but maybe a couple of hours in the sink in a bowl of ice water will work too.

              Grilled with lemon is my favorite way to cook it.

                Oh yeah, I'll thaw it... I'm making it tomorrow. I HATE thawing food in the microwave, and I have a strong secret preference for recipes that let me take frozen food right out of the freezer so I don't have to plan ahead to move my food to the fridge with plenty of time. Well I guess my secret is out.

                It's this microwave, I think... I can never get it to thaw anything right. It's a super-fancy microwave and I don't quite understand all its settings... every time I try to thaw anything, I end up cooking it a little... oh well. Fish has been moved to the fridge. I'm really excited. My mom says that mahi-mahi is AWESOME.

                  You can thaw it overnight in the refrigerator. I guess it's too late now... That's how I thaw my food if I know I'm having it the next night. Just move it from the freezer to the fridge. I am not sure if leving fish out on the counter for a while is a good idea or not, but perhaps leaving it out on some paper towels (in package) for a couple hours would work. I hate microwave defrosting too!

                    Hey guys... wanted to let you know that the mahi-mahi came out great... I cooked it in the oven rubbed with grilling spices and covered in melted butter. Kinda squished all your suggestions together. (And yes, I did thaw it in the fridge.) Man, mahi-mahi is one tasty fish! Thanks!

                      G;ad to hear it came out well! Yeah, Mahi Mahi is one of my favorites along with swordfish. It's got a great combination of firmness and flakiness.

                        I am with Higgies on this one, I like mine blackened. YUM!
                        Our Kroger just had Mahi on sale for $3.99 a pound. I was stoked! We had it several times that week.

                          MamaG, when you blacken your fish do you cook it in the house? I love blackened fish, but to do it right you gotta get the pan red hot first and when you throw the fish it it smokes something fierce! definatley sets off the smoke alarm everytime. That plus my stove does not have a vent over it which makes it worse. You really made me crave some blackened fish, maybe I'll do it outside on the burner of the gas grill?

                            Here's a recipe for Mahi Mahi with Creole Sauce (from Atkins Best Recipes - cookbook)
                            Good for Phase 1, 2, 3, & 4

                            Ingredients:
                            4 (6-8 ounce( mahi-mahi fillets or other firm white fish
                            1 tablespoon fresh lemon juice
                            Salt and pepper
                            1 tablespoon butter
                            1/2 small onion, thinly sliced
                            1/2 small red bell pepper, cut into thin strips
                            1/2 small green bell pepper, cut into thin strips
                            1/2 cup chopped canned tomatoes, with juice
                            1 tablespoon shopped fresh cilantro
                            Hot pepper sauce to taste
                            1 tablespoon olive oil

                            Instructions:

                            1. Sprinkle fish with lemon juice, salt, and pepper; set aside. In a saucepan over medium-high heat, melt butter. Cook onions and bell peppers 2 minutes, until barely tender.

                            2. Add tomatoes with their juice; reduce heat to medium and simmer 8 minutes, until sauce thickens. Stir in cilantro. Add pepper sauce to taste.

                            3. Heat oil in large nonstick skillet over high heat. Saute fish 3 minutes per side, until cooked through. Transfer to a serving platter. Spoon sauce over fish.

                            Per serving:
                            Net Carbs: 2.5 grams
                            Total Carbs: 3 grams
                            Fiber: 0.5 gram
                            Protein: 42.5 grams
                            Fat: 8 grams
                            Calories: 261
                            Servings: 4
                            Prep Time: 20 minutes
                            Cook time: 20 minutes
