  • In need of zucchini nut bread recipe help

    I am trying to follow Atkins 1 week induction menu. The recipe for the zucchini nut bread calls for 1 and a half cups of granulated sugar substitute. I bought a box of splenda and soon realized I would have to use every packet in the box to equal that amount. So, I went and got a box of sweetnlow. I used the amount stated and it seemed to be too much. The results were sweetnlow overkill, the bread was uneatable. I know other recipes call for similar amounts of sugar sub, is it the wrong amount????

    You have made a very common mistake. the packets are equal to 2t of sugar in sweetness and you need 24 to make a cup of sugar sweetener so you only needed 36 for the whole recipe. You will want to cut down the sweetness a bit too to match your tastes.
    I would really recomend you toss those induction menus in the trash and the cans of shake mix too. Use the food lists in chapter 11 of your DANDR book and make your own menus with real foods you like. That way it is your plan and the stress to follow it exactly is gone. If you wake up today and want cheeseburgers for breakfast you can have it and not some omlette you don't want. There is enough stress in this induction period as you cleans your body of your addictions and switch to the ketogenic fuel system.

      Thanks so much for the advice! I haven't really been following the one week plan exactly rather just picking good things off of it to try during these first few weeks so I don't get bored. I was so excited by the bread, but so dissapointed when it came out wrong. I thought it was wrong as I heaped on tons of sugar sub. I will try again tonight.

        Nuts are not allowed on Induction. I wrote to Atkins and they replied that I am right and will be looking into why that recipe is in the induction menu.
