    I got my recipe on the side of the tin of "Atkins bake mix", I am in England I dont know where you are, or if the mix anywhere else in the world has the recipes on.

    IMHO I was not at all impressed with the mix. I made the muffins and didnt think much of them at all.

    FYI there is a recipe for faux pancakes on this board somewhere, I'm not 100% sure of the ingredients as I have it stuck to my fridge at home (I am not at home at the moment)

    Cream Cheese
    2 eggs
    Cinamon
    Nutmeg.

    whisk all together until a runny batter consistancy and then make pancakes as normal.

    Not too bad at all, again IMHO much better than the bake mix version.

      Rich is right, its on the can, but in case its not on yours here it is...

      1/2 cup Atkins Bake Mix
      1/2 teaspoon baking powder
      1/4 teaspoon salt
      1/8 teaspoon each cinnamon and nutmeg
      2 packets sugar substitute
      1 teaspoon vanilla extract
      3/4 cup unsweetened soy milk
      2 eggs
      1 tablespoon melted butter
      Vegetable Oil for cooking

      In a mixing bowl combine dry ingredients; make a well in center. Add vanilla, soy milk, eggs and butter ; mix until smooth. Let batter rest 5 minutes.

      Heat skillet over medium heat; coat with oil. Form each pancake with a heaping tablespoon of batter. Cook until small bubbles appear at edges then flip and cook 30-45 seconds more.

      *You may replace vanilla and sugar substitute with 2 tablespoons Atkins Sugar Free Vanilla Syrup (reduce soy milk to 1/2 cup)

      Yield 15 pancakes
      Net Atkins Carb Count: 12 grams
      10 grams with Atkins Sugar -Free Vanilla Syrup.

        The psyllium/flax pancakes are much better tasting, lower carb and Induction friendly. Find the recipe in Low Carb Cooking Lessons.
