    So what's eggplant good for?

    The lasagna is too complicated for me (I'm working with a british oven now and have to be extra careful since I'm not used to it), but besides roasting what else can I do with eggplant? I'm looking mainly for new ideas with veggies since my sister hates them and I want her to eat more besides romaine. That and there's a random eggplant in the fridge my mom bought for no reason

    roast an egg plant with some garlic and then purree with olive oil to make a great spread you can eat on other veggies.
    Make ratatouille a veggie soup and leave out the beans and pasta till you get to those rungs of Atkins.

      take a pot toss in olive oil garlic some canned tomatoes a cut up pepper some oregano and lots of parmesan cheese salt and pepper ..then take cubed eggplant toss it in mix it all up really well ..either cook it on top of the stove like a soup or stew or in the oven ..either way it is really easy just stir periodically ...until it tastes done and also tastes very good ..you can add meat..more spice to it ... mozerella cheese ...or anything this is just a basic dish easy as tossing a salad try it

          This is what I am doing tomorrow. Can't remember where I got this concoction. You layer in a casserole dish, tomotatoes, peppers, onions, eggplant, ground beef and cheese. Put one layer and then another and top with cheese. It is soooo......... good. Add whatever spices you like.

            I like to pan fry my eggplant. I peel it and slice it, nuke slices in microwave for minute or two and then spray a pancake griddle with butter flavored PAM and cook until soft and turning brown. Don't forget to flip to do other side. Take it off sprinkle with salt and parmesan cheese and yum, yum. My daughter and I love this.

              I bread it with egg then a mixture of parm cheese and ground pork rinds then deep fry

                Yup, I agree Atkid. I just pan fry it, broil it in the oven or it is super good on the grill. The important thing is to hydrate is somehow first. Give it a good coating of olive oil or something.

                I used ot make a mean eggplant parmesan, but that's no more...

                    can you guys tell me if the white eggplant does up the same way as the purple? i had never seen white before till the other day. maybe it's a northern thing? i almost bought one and thought i'd ask first. is the taste the same? and i think i read somewhere that i had to peel it first.

                      the white are called Cresent Moon and are much milder in taste and tender. I love to grill them and roast them.

                        hmmmm..... i don't think that is what these were called. doesn't ring a bell. are there several types of white? do you peel them first? i saw that online.

                          white eggplant is more tender and lighter tasting than the big purple ones ...it is good try it

                            I also like the Chinese eggplant---less bitter.

                            Anyhow, eggplant recipes:

                            Stuffed: slice in half, scoop out the innards leaving about a 1/4 inch rim of flesh. Chop the innards, sautee with ground meat and onion. Add cheese. Put back into the hollowed eggplant, top with alittle more cheese. Bake until hot.

                            Eggplant "fries": peel and slice the eggplant into fries. Then fry them. Drain on paper towels.

                            Ratatouille: sauteed eggplant with zucchini, tomato, onion.
