  • Tuna

I picked up a piece of yellowfin tuna (frozen cause I didnt know when Id prepare it) and Im not sure on how to prepare it. I like fish most of the time. This is the first tuna thats not out of a can but Ive heard its very firm (plus) and mild (super plus!). I typically fry cod, grill salmon with light herbs etc. Can the tuna handle heavy flavors? is it more suited to lighter flavor preparations? ANyone have a recipe for yellowfin they love and want to share?

    Re: Tuna

Tuna can handle heavy flavors. I like to marinate the tuna by coating it with olive oil, then rubbing it with a mixture of grated lemon peel, ground black pepper and garlic slices. Let it sit for about three hours in the fridge. Then I grill it (regular grill or George Foreman grill). Squeeze lemon juice over the cooked tuna and serve.

        Re: Tuna

I love tuna and I agree with the way Megs suggested ...and I have also made a pepper crust ...just cracked pepper some chile garlic kosher salt and whatever ..it is a dry rub actually coat all sides of the fish put some oil in the pain and sear it on all sides until crusty ...then serve rare..if you do not like rare fish then just put it in a preheated 350 oven for like 10 min per inch of fish ....very yummy sliced thin on a salad cold later as well .....tuna is better out of the can imho

          Rise carefully
          Place in a pan
Sprinkle with seasoning and squeeze a lemon
Grill and Serve with "drawn" (melted) butter.

            My favorite now days!

Light smear of fresh minced ginger, salt and pepper.
            Sear in coconut oil
Turn down the heat and cook a little longer, top with soy sauce and let run over sides and reduce in the pan for a glaze.
Plate and drizzle with a little sesame oil.

            Heaven...

Here is my favorite grilled tuna recipe! I love fresh tuna!

OLD BAY Grilled Lime Tuna Steak

              1/4 cup olive oil
              4 teaspoons OLD BAY® Seasoning
              2 limes, juiced
2 teaspoons McCormick® Cilantro Leaves (this is a brand name, use any kind you like even fresh!)
              1 pound tuna* steaks

              1. Mix first 4 ingredients in small bowl. Place tuna in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

              2. Refrigerate 15 minutes or longer for extra flavor. Discard any remaining marinade.

              3. Grill over medium heat 5 to 6 minutes per side or until desired doneness

Arent their catalogues tempting!! You have to go into one of their stores sometime. The smell is FABULOUS. plus they have large quart sized jars of all the spices/herbs etc that you can open and smell. oh so yummy.
(and if its not on your list... add the pork chop seasoning. lol. I had some on my chops last night actually, so yummy!)
