Here's a link I found. I used the recipe that is the second post down (cut it in half and ate one piece a day). It was GREAT! Tastes like a bran muffin. Yummy!

Here is my fav:
Breakfast Muffin
1 dozen eggs (I usually end up using 10 eggs)
1 package of breakfast sausage
Shredded cheddar cheese (or cheese of choice)
I spray a muffin pan with Pam spray and preheat the oven to 350. I brown the breakfast sausage like you would ground hamburger. I drain and then fill the muffin tins about 3/4 full, then add shredded cheese to the top of each muffin. Scramble the eggs and pour the liquid over each muffin. Bake for approx. 20 minutes.

I just made one (ok two - tee hee!) of these today. Zip Zero Nada net carbs per each!
1 T melted butter
1 T ground flax seeds
1 T parmesean cheese with a dash of salt
1/4 t baking powder
1 egg
Microwave 2 mins on high in a glass bowl about the size around as an english muffin. This makes one perfect size Flax muffin thingie. Then toast in the toaster until brown! Mmmm, actually reminded me of eating a piece of bread without the guilt! I had one with cream cheese on top and another with melted cheese on top. You could easily make a grilled cheese!
