  • UNBAKED (if that's even a word) cheesecake

    I have made the NY cheesecake and while I LOVED it I must admit I really like the unbaked versions better. I can find TONS of the baked versions but have been unable to find ANY recipes for a cheesecake that doesn't need to be baked. Anyone have one????

    Here is one if you can tolerate aspartame (in the SF jello)

    Low Carb Recipes

    No Bake Cheesecake


    1 sm. pkg SF Jello, any flavor
    1 c boiling water
    12 oz soft cream cheese
    1 cup ricotta cheese
    12 pkgs Splenda
    1/2 cup heavy cream


    Dissolve gelatin in boiling water and stir well. Blend cream cheese & ricotta in separate bowl with electric mixer. Whip in the Equal. Add gelatin mixture and blend until smooth. Whip the cream to heavy peak stage. Fold in jello mixture. Pour into paper-lined muffin cups and refrigerate until set.
    Total: 29 carb. Makes 10 @ 3 carbs

      Low Carb Recipes

      Cheesecake Muffins


      1 pkg gelatin (plain)
      1 c boiling water
      16 oz soft cream cheese
      1 t vanilla
      16 pkgs Splenda
      1 oz unsw. Chocolate, melted (optional)


      Dissolve gelatin in boiling water and stir well. Cut cheese into small pieces and place in dissolved gelatin. Add melted chocolate (if using) and mix. Add vanilla, sweetener and beat well with electric mixer (2 min. on med/hi). Pour into buttered pie pan or 12 muffin cups. (If using muffin cups, put cupcake paper in cup first). Chill until firm, 2-3 hours.
      Total 34 carb (30 NET carbs). Makes 12 @ 2.5 carbs

        Light Cheesecake delight

        Note: Makes 1 10-inch or 16 pieces only 5 carbs per serving This makes a very light cheesecake. The nutty crust is reminiscent of the middle of an Almond Rocca. Browning the almonds well and cooking the butter until browned really adds an extra dimension of taste.

        Ingredients:
        1 1/4 cup well toasted whole almonds
        3 Tbsp. unsalted butter
        2 Tbsp. brown Sugar Twin
        large pinch of cinnamon
        5 tsp. gelatin
        2 cups whipping cream
        3 eggs, separated
        2 lbs. cream cheese, at room temperature
        1/4 cup Splenda
        1/4 cup pourable white Sugar Twin
        2 tsp. pure vanilla extract


        Chop or pulse the almonds in a food processor so half of them are finely chopped and half of them remain coarse. In a heavy pot melt the butter over medium heat until it turns a rich, nutty smelling brown. Add the almonds, Sugar Twin and cinnamon. Stir well and press into the bottom of a 10-inch spring form pan. Refrigerate.

        Place 1 cup of the whipping cream in a heatproof bowl. Sprinkle the gelatin over the whipping cream and let stand until softened. Beat in the egg yolks. Over a pot of simmering water beat the mixture with a whisk until it thickens and increases slightly in volume. Remove from the heat and let cool slightly.

        Beat the cream cheese until smooth. Add the Splenda, Sugar Twin and vanilla. Beat until well combined. Beat in the gelatin mixture. Beat the remaining cream to stiff peaks and fold into the cream cheese mixture. Beat the egg whites to medium peaks and fold into the cream cheese mixture. Pour into the prepared crust and chill overnight.

        To cut a cheesecake neatly, Dip your knife into very hot water and wipe the water off before making each cut. Lining the bottom of the pan with parchment paper will help the crust lift off the pan cleanly.

              I once had a blast with these using the sugar-free syrups...

              2 packages of cream cheese
              1 envelope of Knox gelatin
              1/2 cup syrup, 1/2 cup water
              Dissolve knox in liquids then whip into the cheese. Let them cool and they can be cut into "squares"... I like to put them in muffin cups for single servings.

              Anyway, I love the variety. You change your flavours by changing the syrup you use. Raspberry, mmmm... Lime with zest for garnish on top... chocolate with a cocoa powder dust... coconut with freshly toasted coconut on top... my favorite is peanut butter, but don't buy the syrup if you don't already have it - it's blah. Instead just mix a 1/2 cup peanut butter into the whole recipe.

                ok I ordered the almond flour now what do I do with it can I make pancakes what kind of cookies can I batter zucc with it , Well I went out for my b-day and ate what ever I wantedI had ben prepared I thought I have ben on this way of eating for about 6 months so
                I thought I could handle it but that night at around midnight I felt so sick has anyone else felt this way
