    I want a really nice cheesecake to take to a family dinner with some low carber and some not.

    Champion Cheesecake

    4 8 0z cream cheese
    1 carton 16 oz sour cream
    1/4 lb sweet butter
    2 Tbsp cornstarch (or thicknthin, or xantham, or guar. whatever thickener you choose)
    1 1/4 cup sugar (or Splenda)
    1 1/4 tsp vanilla
    1tsp lemon juice
    5 eggs

    let cream cheese, sour cream, butter and eggs sit 1 hour. Preheat oven 375 deg. Blend cream cheese, butter and sour cream. Then add cornstarch, sugar,vanilla and lemon juice. With mixer set on high, beat till well blended. Beat 1 egg at a time, continue till very smooth. Pour into greased springform. Place in larger pan. Add warm water till halfway up other pan side. Bake 1 hour or until golden brown. Turn oven off let sit 1 hr. in oven. Remove, let stand 2 hrs, then refrigerate for at least 6 hrs. before serving.


    I don't know exact carb counts for this. I just made it last weekend for a work party where I am the only non-atkins person and it was a big hit. I broght hershey's syrup for the people who ate sugar and they could serve up themselves. I just ate it plain and it was good.

      Sounds like a great recipe. I had a thought, tho. I wonder if you could melt an "Endulge" bar or two to swirl into the batter for a chocolatey taste. MMMMM, getting hungry just thinking about it.

          lemon or lime jello cheesecake

          1 small carton of whipping cream (half pint)
          1 small lemon diet jello
          2 oz. softened cream cheese
          1 packets of splenda
          vanilla

          Whip the cream to soft peaks
          desolve the jello in 1 cup of hot water
          To the whipped cream add the hot jello mix, add the soft cream cheese, vanilla, and splenda.
          With your mixer, blend all these ingredients until smooth.

          Pour this mixture into a glass or corning dish ( it will be runny ) and then place into your freezer or refrigerator. I put it into my freezer for 15 minutes and it setup.

          If you want a soft dessert put it into the refrigerator, if you want a frozen dessert this freezes well. You decide

          We love the lemon flavor , so I decided to experiment and see if I could come up with a winner, I think I did, what do you think?? we just tasted this and I know I will be using this recipe when I need to make a dessert for special occations.
