        since you will have leftover duck.....
        Duck Confit!!!!!!!

        take the leftover duck bits and pieces, put them in a jar cover them with the duck fat juices (completely cover the duck with fat) and seal the jar.

        since the duck is fully cooked, all the bacteria is killed off. and since you cover it with fat, no air can get to it.

        it's a very old school way of preserving food, but it is soooo awesome....

        we learned to do this in Garde Manger class in culinary school, which is where aspiring chefs learn how to take every little leftover scrap of food and keep it or make it edible.

        confit will last for a month or more in the fridge (up to about 6 months if the duck was salt cured!!)

        so delicious, I need to go get a duck.

          Wow! Duck Confit sounds awesome Chef Kevin! Thanks! The only thing is... knowing my family, there won't be any leftovers!!!

          Anyway... this coming weekend that darned duck is going from freezer to oven, whatever happens!

            If you have ever heard of beer can chicken, I have a recipe I came up with in culinary school. This is a chef kevin original.....

            Sprite Butt Duck!!!
            1. Open a can of sprite (Lemon-lime soda for anyone from other parts of the world)
            2. dump out half the can
            3. Stand the duck up and place on the sprite can (hence "sprite butt")
            4. place bird with implanted can on roasting pan
            5. roast the bird until it reaches desired doneness. (oven about 375 for crispy skin)

            the sprite will steam the inside of the duck and infuse a lemon-lime flavor into it.

            It's pretty decent. just like that and I saved the legs for the confit.

              Well, Kevin... that's a novel way of cooking duck! I'm just laughing, picturing my bird with a sprite can up its butt! Reminds me of Mr Bean at Christmas, if you ever saw that episode! He ends up with his head in a turkey!!

                      How could I forget to mention!! The duck got done in at the weekend! Finally!
                      I went with Heidi's raspberry recipe (the very first) because I had all the ingredients. It was awesome!!! Thanks so much Heidi! Definitely one to repeat. Of course there were no leftovers for a comfit... so I'll just have to get another duck for that... or ten...so I can try all the other recipes!

                        OMG how did I miss this!!!!! whooo hooo isnt it wonderful the raspberries are such a great contrast to the rich duck ...yummmmm...good for you!!!!

                          ROTFL!!! I was giggling too at the recipe title, it's kind of a fun name

                          I'll have to try this sometime! I'm browsing for duck recipes, we have a duck in the freezer now for Canadian Thanksgiving next week!

                            I found this duck recipe online, sounds low carb. Sounds yummy, but I think I want to try the sprite (will use sugar free) recipe Kevin posted, unless I decide to try some low carb stuffing. Too many choices! LOL.

                            Cream Cheese Duck

                            ~ 4 duck breasts filleted or 8 half breasts
                            ~ 1 package cream cheese, cut into chunks
                            ~ 16 jalapeno slices
                            ~ 8 pieces bacon
                            ~ tooth picks

                            Butterfly duck breasts.

                            Add some cream cheese chunks and 2 jalapeno slices on one half. Fold breast back over secure closed with toothpicks.

                            Wrap with bacon and secure with toothpicks.

                            Grill over medium-low heat until the bacon is done. Best when cooked medium to medium well. Don't over cook!

                            Serve and enjoy.

                              OMG who would have thought of that??? that sounds absolutely up my alley!!!!

                              I had duck pho' for lunch today for the duck lovers amongst us and the Pho' lovers ...the two together ......mmmmmmmmmmmmmmm extra duck no noodles please
