I use mine in foods like eggs, chile, soups, burgers, salads or just eat them plain.

some folk stuff them and if you look for the firecracker topic you can see some great ideas with pics too.

I like cheddar cheese and chorizo sausage as the stuffing.

      oh yeah!

then top them with guacamole and sour cream.

Thanks Kevin and 2big! Did a search for the firecracker thread...found it..but it contained links I didn't have access too...bummer.

Can I just cream some cream cheese and garlic together and throw that in them?
How about some Par. cheese and another spice? Something tasty but super easy.

I take the jalapenos and slice them in half lengthwise. Then, I soak them for a while. Fill them with cream cheese. Then wrap each pepper with a slice of precooked bacon (it is crispier) and bake at 400 until they look crunchy. They are AWESOME!

I love jalapeno peppers. I slice them in half and do the cream cheese and bacon thing ( I also pre-cook my bacon and then crumble it). I dice the peppers and throw the min an omelet or scramble. It's easy to control the "heat" by how much vein and seeds you leave. I also sprinkle diced peppers on salads and in aioli (mayonnaise). They're very versatile.

great ideas everyone! Thanks so much! Got the firecracker thread and they stuffed with cheese that doesn't melt (never heard of that before) and wrapped in bacon and put on a stick onto the BBQ.

these are not quite jalepeno poppers but they are a fav in my house.
Take "guero = chile guero = yellow hot chile = caribe", slit in side, remove seeds, stuff with 1 small to med shrimp and mozerella cheese, wrap in bacon, secure with toothpic and drop in hot oil until bacon is crisp.

Me too! Me too! The first time I made them, I didn't have an outdoor grill, and I smoked me and hubby out of the house. LOL. Now I put them on the outdoor grill and it's much safer. They're a little time consuming to put together, but the results are well worth it. I like to make these when we have guests for dinner.

I just broiled mine...were they the ones that were just cream cheese and cheddar cheese mixed and stuffed into the halves? Maybe that was someone else's recipe...oops! They were good regardless! The first time I used Jarlsberg cheese instead of cheddar and that was really good too.
