Has anyone used coconut flour before? I found some at a natural grocery that I rarely visit and of course figured Id have to give it a shot.

Also had some soy flour that I grabbed as well.

Has anyone used either? have any ideas that would work for a Legumes Rung gal?

I've used soy and the finished product tastes like soy. But my taste buds are super-sensitive, so it might not bother you as much.

As for coconut flour, never used it and probably won't because I'm not a big fan of coconut either.

I am bumping this .I have used this in the past ..but it has been ages and I found a really cheap source for coconut flour and want to use it ..soooooo anyone use it yet??? have any good recipes???

...I am thinking cake or bread to start....I figured I would just go at it like a the almond pound cake recipe Jen has and use the coconut flour instead....

I love coconut so I am excited to try this again.....

I've never even SEEN coconut flour before....are you getting it at some exotic food store Heidi??

I love coconut--the meat, the milk, the oil--does the flour have that same coconutty flavor? I would imagine it would make an excellent breading...maybe tempura shrimp? Or excellent in cakes if it has that flavor.

Ok I just did this and it tasted good going in so we will see
yes it tastes like coconut!!! really good I am so excited ..and yes I bought it at an Indian market a huge bag for like 2 bucks!!!

              3 eggs
              grated zest of one lemon
              4 packages of Splenda
              1 scraped vanilla bean
              1 cup sour cream
2 cups coconut flour (it is kind of dry compared to grated coconut actually)
and 1 cup chopped macadamia nuts)
pressed it all into a pan and am baking it now ...omg it smells like heaven in here!!!

I will let you know how this comes out

you can buy coconut flour online but it seemed kind of pricey to me ....I have as I think I said before put coconut in the blender and made it myself but this feels much more dry to me I think....

Heidi - I just noticed this thread and your recipe looks great. We have a few 'Asian-type' shops nearby and I shall go looking for coconut flour and try this.

What temp and for how long did you bake it?
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
