  • REQUEST: Atkins Magic Rolls recipe

    I was looking for a LC/Zero carb hamburger bun recipe, and someone from another site forum had this to say:

    In the early Atkins books (c1970) there is a pate a choix recipe for bread that makes a nice burger bun that is kind of croisssant like (it is very light) I think they were called magic rolls.
    I have two Atkins books, but they are not from the '70's and don't have this recipe in them. Does anyone have this recipe?

    Here's the recipe for improved revolution rolls that I like to use. They're very very light so I don't know how well they would hold up to a hamburger.

      Hi Paula Jo! Welcome to the forum!

      Revolution rolls have a lot of fans, but it think you're talking about an entirely different animal than the zero carb bun you're looking to recreate.

          if you are going to use it as a bun follow not2lates suggestion and leave it in the oven to dry out with the heat off and the door cracked after you finish cooking it.

            I think they're referring to the Revolution Rolls in the 1972 book. I'll have to look at the book again, because I think there was a choux-type recipe too or somethign similiar to that.

            The Revolution Rolls recipe posted in the 14 Day Induction forum (http://www.atkinsdietbulletinboard.c...ead.php?t=6807) holds up very well in a hamburger. In fact, that's what I use as hamburger buns and for sandwiches I take on hiking/day trips.

            Linda's recipe uses an extra egg white, so I can see how that would make them "fluffier" and more likely to get soggy.

              I looked through DANDR 1972, its companion cookbook and another book of Dr. Atkins' from the 70s called "Dr Atkins Super Energy Diet". I think the "magic" buns are the Revolution Rolls. I also found alot of recipes in those books that look very yummy.
