I do not have the exact quantities but this is good
1 lb lean ground beef
1 lb lean ground pork
1 onion minced
3 cloves garlic
1 bunch chopped parsley
1 tsp dried oregano
1 tsp crushed red pepper
salt and pepper to taste
2 cups your favorite tomato sauce (1/3 cup to be mixed in with the meat mixture and the rest is to be poured on top during baking)
2 eggs
1/2 cup almond meal (if you are not eating nuts you can use just parm)
1/2 cup fresh grated parmesan cheese
nice big bell peppers (mix colors it looks so pretty when you do!)
mix this all together like meatloaf you can add or mix spices differently ...
slice great big bell peppers in half and clean them out well ..stuff them with a handful of the meat mixture ....lay them in a huge baking pain that has been coated with a lot of olive oil then drizzle olive oil on top pour the rest of your tomato sauce over them
sprinkle with some more parm and then bake at about 375 until browned on top and the peppers are done 35-45 min depending on the size of your peppers and pan
