It is so ironic that you ask for this...I was just looking through the big y Healthy eating magazine, and they had mini pumpkin cheesecakes in there, and my sister and I were trying to figure out how to make them induction friendly. If I made them crustless, the only problem I anticipated was the cornstarch they recommended.

I made this last night.. put it into cups so I used no crust. Substituted with splenda, and made my own whipped cream. It was pretty good, tasted alot better after chilled.
