  • dipping sauces for meats

    I need some dipping sauces ideas for meats.

    I have been using mayo and garlic and pepper for a garlic mayo dipping sauce for chicken and its not as great with beef.

    Any ideas?

    beef: sour cream and horseradish (diuretic food = whooshie food) you can add a little bit of mayo too. You could do different variations on this one, instead of horseradish, use chipotle peppers.

    I like franks red hot and butter for just about any meat. mmmm mmm mmmm It's like buffalo wing sauce.

      Flavored olive oil. You can buy it in some grocery stores or you can make it. Just heat a cup of olive oil, remove from heat, add herbs and spices of your choice, cover and allow it to sit until cool. Strain out the solids and you have a flavored oil. The oil can be used straight: splash some of it over a cooked meat. It can be mixed with something flavorless like mayo or used in salad dressing.

      Flavored mayo: like what you're doing now but change up the flavors. For example, chop a couple chipotle peppers into the mayo.

      Classic egg sauces like hollandaise and bearnaise.

      Flavored butter: soften a stick of butter, then stir in chopped herbs, spices, lemon peel, etc. Roll into a log and freeze until firm. Then slice off a round and place on top of just out of the grill or pan steak. The butter will melt, flavoring the meat with whatever spices/herbs you added.

        I'll second the Horseradish sauce. Mayo, sour cream, horseradish. Yum! I love that with a steak.

          I like sour cream and/or mayo with:
          • different kinds of curry blends (I use the sniff test) stirred in.
          • lemon juice and grainy mustard stirred in.
          These are great for all kinds of meats.

            This one is really good with hamburgers and chicken:

            CREAMY BBQ SAUCE
            1 tablespoon low carb barbecue sauce
            1 tablespoon mayonnaise
            1/8 teaspoon granular Splenda, or to taste

            Blend barbecue sauce, mayonnaise and a little Splenda, to taste.

              Where do you get low carb bbq sauce? I can't find it anywhere!

                someone said that KC masterpiece was low carb, ill have to check.

                  if you coat your meat with your garlic mayo and grill or bake it you will find it gives it a different flavor then cold mayo dipping.

                  I lover roasting peppers sweet or hot and then pureeing them with a bit of olive oil as a sauce. you can roast garlic and peppers and blend with EVOO or butter as a sauce too.

                  I love buffaloed any meat with the hotsauce and butter.

                  you can do a cheese dipping sauce if you grate your cheese and mix with mayo allow it to sit if it is a pungent cheese and if it is something like cheddar spread it on and allow it to melt on your meat.

                    I was going to also suggest hoseradish.

                    Other good ideas are cheese fondue, or mayo with hickory smoke flavor or hot sauce mixed in.

                      I've still got a couple bottles of Carb Options BBQ sauce in my pantry but I used KC Masterpiece the last time I made the sauce. Both kinds are very good in it. They sell KC Masterpiece Classic Blend at Wal-Mart.

                        I guess I'll have to try Wal-mart I wish I didn't hate going there.

                        I've tried Publix, Albertson's and Sweetbay, no luck with any of those.

                          stell makes a sugar free Splenda one Steel's Splenda Barbeque Sauce but you have to get it on line.

                          I just used the better homes and gardens cookbooks BBQ sauce recipe and fixed it to be low carb with the low carb ketchup recipe in Naja's post in the cooking lessons section.
