  • Eggplant

    I have some eggplant here that I would like to fry in butter and top with Parmesan cheese. Do I have to do anything to the eggplant first except slice it. Should I peel it? I am being adventurous today.

    what youy do to your eggplant will depend on how you like the taste. some folk think the peel is tough and too strong tasting others think the peel flavor is what eggplant is all about.

    if you want some of the liquid ut of your eggplant then you can soak it in salted water for about 30 min before you cook it. this will use that osmosis we all learned about in grade school to force the plant to expell water cause the salt concentration is larger outside then inside. don't leave it too long or your eggplant will prune like fingers do when in the bath too long.

    what kind of eggplant did you get? if you got purple ands it is too strong for your tastes next time try a cresant moon they are white and very mild or get the long skinny purple ones Japanesse as they have a milder flavor too.

      Thanks so much. I got the purple kind. I am going to try the ones you mentioned also if this turns out well.
