    Looks good. When I get time, I'll have to plug the ingredients into fit day to get the actual carb count.

        I started plugging in the numbers and I'm at 126 carbs for the recipe. I might have selected the wrong kind of chestnuts. There are no water chestnuts on fitday, so I picked chinese chestnuts. Might not be the same.

          1 cup of water chestnuts has 17 carbs. Yikes!

              Fit day was definitely wrong. But the hoisin sauce has 26 carbs for 3 tablespoons, and I'm getting a lot of mixed info on the shiitake mushrooms. The last info I saw said 3 ounces of shiitake had 3 carbs. How many ounces of shiitake's are in 2 cups? Now that's the question.

                  Suzan, it happens. I'm sure it could be modified to be much lower carb. Maybe use jicama instead of water chestnuts, skip the orange peel, and use tamari sauce and a little splenda instead of hoisin? I'm still thinking about making it. I'll just have to tweak it a bit.

                    I recognized that as a Rachael Ray recipe. I saw her make that on TV and it looked delicious. One of these days I plan to come up with a low carb version. Here's the link to Rachael's recipe:

                      I'm thinking about making this using jicama instead of water chestnuts (and not cooking the jicama). I'd skip the hoison all together and use soy sauce and a pinch of splenda. Of course, I'd also skip the orange zest. I'll have to experiment a little.

                        I just remembered that I'd already come up with a low carbed version of Rachael's recipe but I haven't had a chance to try it yet. Note my sub for hoisin sauce at the end of the recipe. I did try that mixture once and it wasn't bad.

                        CHINESE CHICKEN LETTUCE WRAPS
                        1 1/2 pounds boneless chicken breast
                        1/2 pound fresh mushrooms, sliced
                        2 tablespoons oil
                        Salt and pepper, to taste
                        3 cloves garlic, chopped
                        1 tablespoon fresh ginger, grated
                        Zest of 1 orange, grated, about 2 teaspoons
                        1/2 red bell pepper, minced
                        1/2 8-ounce can water chestnuts, drained and chopped fine
                        3 green onions, chopped
                        1 tablespoons hoisin sauce *
                        1 tablespoon freshly squeezed orange juice, optional
                        6 ounces leaf lettuce, about

                        Chop the chicken into small pieces. Heat the oil in a large skillet or wok on high heat. Cook the chicken for 1-2 minutes. Add the mushrooms and cook about 2 minutes. Season with salt and pepper, then add the garlic and ginger. Cook about 1 minute. Add the orange zest, red bell pepper, water chestnuts and green onions. Cook and stir 1 minute. Add the hoisin sauce and stir to coat everything well. Serve the chicken wrapped in lettuce leaves.

                        Makes 4 servings

                        * If you don't have hoisin sauce you can create your own by mixing 1 tablespoon low carb barbecue sauce with about 1/8 teaspoon Worcestershire sauce and a pinch of Chinese five-spice powder. It won't be quite the same, but it should work fine in this recipe. If you use this substitute, subtract 1 carb per serving. Rachael's original recipe called for 3 tablespoons of hoisin sauce, which I cut down to 1 tablespoon to save carbs. If you use the substitute version, feel free to use 3 tablespoons of it and keep the carb count the same as listed below.

                        Per Serving: 297 Calories; 9g Fat; 42g Protein; 10g Carbohydrate; 2g Dietary Fiber; 8g Net Carbs

                            your jicama will absorb the flaover of the sauce if you cook it with the stuff and still be crunch MissPhode as the saying goes nothing man can do will soften jicama in the kitchen.

                            and yep that is the one and only recipes site lady low carber. isn't it great she is fixing recipes here too!

                              I love Linda's website (who doesn't). If I can't figure out what to make for dinner, I always find something great there.
