Hi all! I bought sirloin steak tips on sale and now I don't know what to do with them. I don't always have good luck with meats I'm not experienced cooking (usually tough and tasteless). Any recipes?
This is from STeaks, Chops, Roasts and Ribs by the editors of Cook's Illustrated
They suggest marinating and grilling the tips. They have 2 marinades that makes enough to marinade 2 pounds of the steak tips:
Southwestern Marinade
1/2 cup soy sauce
1/2 cup veg oil
3 medium garlic clove minced
1 tablespoon each dark brown sugar, tomato paste, chili powder
2 teaspoons cumin
1/4 teaspoon cayenne.
Combine ingredients together.
Garlic, Ginger, and Soy Marinade
1/3 cup soy sauce
3 tablespoons veg oil
3 tablespoons toasted sesame oil
3 medium garlic cloves minced
1 inch fresh ginger root minced
2 tablespoons dark brown sugar
1 teaspoon orange zest
1/2 teaspoon red pepper flakes
1 medium scallion sliced thin
Combine ingredients together.
I think you can either ditch the brown sugar completely, or use a brown sugar substitute or use alittle bit of the DAvinci pancake syrup for the molasses flavor and sweetness.
Make a marinade and put it and the meat into a ziplock bag. Marinate for 1 hour in the refrig, turning the bag over after 30 minutes (to ensure the meat is completely marinaded)
Remove the meat from the marinade. Pat dry with paper towels. Then grill on one side until well seared and browned, about 4 minutes. Flip over and grill another 4-5 minutes for medium rare, 6-8 minutes for medium. Remove from grill and cover loosely with aluminum foil. Allow to rest for 5 minutes.
Slice the tips on a bias.
Apparently it's a rather tough piece of meat, so you need to slice it against the grain to be tender.
you know, you could probably braise or slow cook them too. I found a great beef stewy type recipe that's great for the crockpot.
Take beef, sear it on all sides in a frying pan, then put it in the crockpot. Add a chopped onion, a chopped tomato (or about 1/3 cup canned diced tomato), salt, pepper and 2 tablespoons ground allspice (no that isn't a typo!) Set the crockpot on low and cook until you can easily pierce the meat with the tip of a knife. Remove the meat. Skim off as much fat as you can from the cooking liquid. Put the liquid and the vegetables into a blender and puree until smooth. Thin it out if you think it's too thick---that's your gravy. Then return the meat and the gravy back to the pot and keep warm or serve immediately.
I like cooking these crockpot things over night. Then in the morning, I turn off the pot. Allow the food to cool. By the time I get home, I can skim the fat off, make the gravy, heat it up and have a nice hot meal.
It's a great veggie-incorporating trick for OWL. Saucing the veg, reduces volume so you don't have to wonder how you're gonna fit 5 net carbs of a veg into your stomach.
