    Wow, I JUST found this thread mentioning the stuffing quiche I posted a while back... I haven't been on the boards much the last couple of days though.

    All these other "stuffing" recipes looks great, and I'll have to try them. I am quite satisfied with the one I posted (I love the texture).

    This WOE is so easy and wonderful for those who love to cook!
    No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

      Oh I meant to mention that when I made that stuffing quiche (http://www.genaw.com/lowcarb/chicken...ng_quiche.html ) that I used sage instead of parsley... I have also made the chicken and stuffing quiche without the chicken and with 2 lbs of sausage instead.
      No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

        I came up with this recipe a while back. It's a combination of all of those recipes of mine that were mentioned in this thread. So far, it's the closest I've come to the flavor and texture of stuffing/dressing without having to use any kind of low carb bread.



        TURKEY AND DRESSING CASSEROLE
        1 1/2 pounds frozen cauliflower
        1 pound pork sausage
        20 ounces ground turkey
        2 stalks celery, chopped
        1 medium onion, chopped, 4 ounces
        1 pound mushrooms, quartered
        8 ounces cream cheese, softened
        8 ounces cheddar cheese, shredded
        Poultry seasoning or seasoning of your choice
        Salt and pepper, to taste


        In a very large soup kettle, cook the cauliflower as directed on the package until tender; drain very well. In the same pot, brown the sausage and turkey along with the celery, onion and mushrooms. Season with poultry seasoning, salt and pepper. Drain fat, but keep meat in pot. Stir in the cream cheese until well blended, then add the cauliflower and cheddar cheese. Adjust the seasonings, if necessary. Spread in a greased 9x13" baking pan; cover with foil and bake at 350ยบ for 30 minutes. Uncover and bake an additional 20-30 minutes or until hot and bubbly and the top is browned.

        Makes about 8-10 servings Per 1/8 Recipe: 541 Calories; 41g Fat; 35g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs
        Per 1/10 Recipe: 433 Calories; 33g Fat; 28g Protein; 7g Carbohydrate; 2g Dietary Fiber; 5g Net Carbs

          Linda I didn't even know you were on this site! Thanks for posting this- I will have to try this one this year! Sounds delicious! I think I will try it before thanksgiving though, since everyone liked the stuff I made last year so well... and I had made it vegetarian b/c my mom is vegetarian... it gives her something else she can eat!

                  Well I feel like you helped to make my weight loss possible with your delicious recipes (your rating systems and your photos too!). You even got me down the road to experimenting some things of my own.

                      You are a celebrity to us with all those delicious recipes. Can I ask you have you ever found anything close to an oyster dressing. Maybe using oysters in one of those quiche dishes that you make? We always have oyster dressing and it is one of the hardest things for me to give up on the holidays, if you have any suggestions please let me know.

                        I've never eaten oyster dressing so I have no idea what it's like. Is it just regular bread stuffing/dressing with oysters added?

                          Yes exactly, I know the base of it is stale French Bread ripped into pieces soaked in water and flavored with onions, bell peppers, celery and other spices along with oysters. Don't know the exact recipe though but , will so miss it if I can't find something close to replace it with.
