Re: Marinades
The one above sure sounds good!
Anyway, I get creative as I mix, so I probably never make the same marinade twice, but here is an old staple of mine, which is great for pork, beef, and I suppose would be great on chicken too, but as I won't much eat chicked without some extreme flavors going on, I would get much more in the mix for a chicken marinade.
equal parts soy and worcestershire, lots of crushed garlic, fresh ground black pepper, olive oil
Now for pork, a sweetener, or flavored syrup and maybe rosemary (depending on what you are serving with) is fantastic
For beef, I would pack as much basil in the flavor as I can, even as far as adding basil essential oil (only a few drops needed)
This same recipe is good for shellfish, but use white wine instead of worcestershire, or a white balsamic, or rice wine vinegar.
With the beef and shell fish...salt lightly with kosher salt just before grilling, or after. With chicken, definately salt after the grilling, not before.
Hope that was some help

Re: Marinades
When it comes to marinades, I'm a simple girly...my personal favorite for chicken is Italian dressing--it's cheap, easy, low-carb, and it keeps the chicken really moist. I've also done tequila and lime juice, as well as just marinading in Red Hot, straight up--that's for when I make buffalo sauce after it's cooked.
For beef, like flank steak, we've always used a teriyaki marinade...though I'll have to be finding a substitute for that, unless I can find one that's not so high in carbs...our favorite is this stuff called Cattle Cover. I've also made a decent marinade out of red wine, garlic, olive oil, and ground pepper.START 8/16/06 @ 270+~MG1: 220-12/2/06~MG2: 210-1/07~MG3: 199-3/2/07~MG4: 190-4/27/07~MG5: 180-7/04/07~GOAL: 170

Re: Marinades
A good one for chicken is crushed garlic, dried chillies, lemon zest, soy sauce and oil, I sometime also just pout the marinade over chicken thighs and bake in the oven - nice flavour with a touch of heat!
