  • Side dish recipe needed

    I have a family reunion Sunday and I am suppost to bring a vegie dish. Any suggestions? Also I am on the Induction phase.

    Salad, Green Beans w/ Bacon, Cauliflower ("potato") Salad, Homemade Cole Slaw are just a few ideas.

      Just about any veggie dish is fine as long as it is not a starchy or high sugar veggie dish. No potatoes, beans, peas, corn or carrots, go a little easy on the tomatoes and onions, but anything else is good. You can prepare rich, delicious veggie dishes using butter, eggs, cream, cheese and meat as additions. Such as:

      Collard greens with ham hocks or pork
      Creamed spinach
      Eggplant stuffed with Italian sausage and tomatoes
      Green beans with hot bacon lemon dressing and crisp bacon bits
      Cauliflower fauxtatoes or fauxtato salad
      Buttered zucchini and eggplant and bell pepper and tomato casserole
      "Potato latkes" made from seasoned roasted spaghetti squash
      Baked broccoli and cheese
      Big salad topped with bacon, blue cheese and eggs
      Vegetable souffle (better bake this one on site)
      Vegetable crustless quiche (many good low carb quiche recipes)

      Any way you can think of to prepare veggies in a luxurious way using nice rich ingredients like eggs and cream and meat and cheese works pretty well on Induction. You do need to limit the quantities of dairy products you are consuming on Induction, so figure that into an average serving of what you are bringing.
