  • Fudge, Cookies, etc...

    So in the next week or so my family is baking cookies and candy for Christmas. I do not want to be tempted or cheat. So I thought we could put our heads together once again for some christmas low carb goodies! I am on rung 1 if that helps any in my situation. * I can not wait til I can have peanut butter and nuts!*


    Fudge , cookies, cake, candy....Ready! Gooooooooooooooooooooo!

    I am not sure if there is a recipe like this but I came up with an awesome fudge...mmm....take one block (there are two pieces in one block) of unsweetened baking chocolate,2 packets splenda (or to taste) splash of vanilla extract,1.5 tablespoons butter,two splashes of heavy cream.....now microwave about a minute and take it out and stir till it melts together,if it is not creamy keep adding cream until creamy smooth.....pour into a container and put in the freezer about 20 25 minutes...should be kinda firm but not frozen......scoop out and enjoy!!! Exactly like fudge..... top it with whipped cream with a dash of cinnamon!!

        Hrmmm check on here for a pumpkin custard or pumpkin cheesecake...that should be legal for you as long as you watch your servings of sweetener, pumpkin, and cheese (I'm not sure how much of those ingredients are in each serving).

          spaghetti squash mixed with tomatoes- ravenous

            The other day I made these really good flax cookies!!


            1 egg
            1 cup flax
            half cup unsalted butter (melted)
            splenda to taste...(I used about 3 packets) (then I used one to sprinkle ontop of the cookies)
            tsp baking powder
            tbsp almond extract
            tbsp vanilla extract
            2 tbsp cocoa powder unsweetened
            couple drops water
            You can add nuts if you want ( I added chopped macadamias)

            Filling
            Heavy cream
            1 packet splenda
            1 tbsp almond extract

            I mixed all the stuff together and formed little balls then flattened them onto a microwave safe plate covered with wax paper. Put them in the microwave for 4 minutes.

            While those are cooking I made the whipped cream. then stuck it in the freezer. When the cookies were done I sprinkled splenda on them and let them cool. I took the whip cream out and dabbed a spoonful on top or in the middle of two (your choice) ...oh man are they good! Super low in carbs!!! (just the egg,however much splenda you use (personal preference)cocoa,and heavy cream for the whole recipe I made I believe it was 8 net carbs....... enjoy!

              dang, those pb cups and cookies sound good...I will definitely have to try those for Christmas!

                I think I'm doing something wrong!
                when I key those flax cookies into my Fitday they come out at
                1794 calories, 71 carbs, 28 fibre = 43 net carbs
                and that's without the 2 tblspns of almond extract because I couldn't find that! so add a few more carbs.

                Is 1 cup of flax the same as 1 cup of flax seeds - I haven't ever used them & I only know them as Linseeds, but I am looking for a few little somethings to take to a party this week. Guess it won't be those!

                or have been doing it wrong all this time? lol

                  flax has no carbs...but for some reason fitday says it does.....it is pure fiber...also are you still subtacting fiber from carbs?

                    Hi Sherice, yes the carbs for flax on Fitday are huge, and I always work out the net carbs. I have whole Flax Seeds in my cupboard and on the nutritional information it says - per 100g:
                    carb 34.3g
                    fibre 27.9g
                    so that's 6.4g of net carbs per 100g
                    I guess thats why Fitday has that also

                    Your recipe does sound yummy to me but I think I will give flax a miss for the moment lol

                      Flax does have carbs, it is not pure fibre. According to calorie king it has 5g's carbs and 4g's fibre per 2 tbsns.

                      On the Bobs red mill bag of ground flax it shows 4gs carbs and 4gs fibre but I think that's been rounded. I would go with the 1g per 2 tbsns to be safe.


                      sweetgir yes the counts will be different between seeds and ground. You can measure out the seeds first then grind and see how much you get an adjust the counts.
