  • Chicken Mole

    Ok, so I've had some really good chicken mole (both verde and poblano) recently and I'm craving it again. It seems like most recipes I've seen are pretty Atkins friendly (OWL at least). Does anyone have an easy recipe? Most of them are pretty complex.

    there is really no point in making mole IMHO if you do not want to take the time really appreciate the entire
    experience ...mole is a very very sensual process ...not just a food...you have to seek out the chiles and spices..the nuts, seeds and veggies...all fresh ...all at their finest ...then you have to toast and roast and pound and stir and puree...and then when it is all done ...you really have to wait at least 24 hours for it to be ...perfect.....

    mole is one of the worlds most completely perfectl foods ..and if you want to make it yourself ..you should really do it correctly ...

    I am happy to share how I do it if you like ....

    the one nice thing about your efforts ..however.....it makes a lot and freezes perfectly....

      Definitely! I've been finding some really good authentic places here in Philly that do it very well. Perhaps I'll take a day to do it up right soon.

        seriously ...ok then I am beside myself with joy Higgies!!!! here you go start with this one Mole Verde... and if you are serious ..I will share the absolute most perfect mole on the planet with you ....Oaxaqueno.....omg!!!!

        I am so excited you have no idea I have always wanted to share this technique with someone really wanting to learn...


        I am going to go shopping now to get the stuff for the Oaxaqueno and make some ..this time writing it down as I go so I can share it with you..

        this is a perfect time for the heat of a wonderful mole...

        hopefully you have a good Hispanic preferable Mexican Market near by?


        Mole Verde



        10 medium sized tomatillos
        4 fat cloves of peeled garlic
        1 big sweet onion peeled and cut up
        3 nice big jalepenos sliced
        (if you like more heat then also add one habenero)
        toss all the veggies above into a roasting pan drizzle with about 1/2 cup of olive oil and 1 tsp of Kosher salt... roast in a 450 oven until everything has a big of a singe to it and is very soft...remove and set aside to cool while you gather the following

        1/2 tsp whole cumin seeds
        10 peppercorns
        3 whole cloves


        toast these spices in a heavy bottom skillet over med high heat .. remove and grind with the mortar and pestle (or a coffee grinder just for this purpose) until a fine powder

        toast the following in the same skillet

        2 tbl of raw sesame seeds
        1 cup of raw pumpkin seeds (pepitas)

        grind or pound your seeds together with the spices until you have a paste ..take your time here if you are using a machine like a food processor pulse it slowly stir down frequently until it is nice and smooth



        Then you take your cooled veggies above and just toss them into the paste and mash them all up well ..or at this point the food processor is fine pulsing and stirring down slowly...

        put the mix into a heavy bottom sauce
        On the stove over medium high while stirring constantly bring this sauce to an almost boil ...a good high simmer and simmer for about 15 min until the flavors combine ...you don't need to really cook it ..Just introduce the flavors to each other ...

        just before removing from the stove stir in a handful of chopped cilantro and set aside to cool

          Wow, thank Heidi! It actually doesn't sound all that bad. I definitely have Latin/Mexican food stores here...I am in Philly!

          Now at what point would I add meat? Would it already be cooked or do you add it raw and allow it to slowly cook in the sauces?

            that one is the easier of my two favorites....
            wait until you see the second mole ..it is much more elaborate ..but amazing and so worth it...

            you can do several things with this sauce ..you can put it all into a crock pot with cubed pork and let it slow cook all day until the sauce and the pork are just amazing ...

            you can grill or broil chicken or fish and just put the sauce over the top at the end of the cooking just to warm it ....

            this sauce is absolutely to die for on grilled tuna!!!

            you my dear man are only limited by your imagination ..double it and freeze it in one cup containers then figure it is about 6 carbs or so per 1/4 cup

                it is wonderful Phode and I am telling you ....it is so good for you think of all those vits and minerals from all that good fresh stuff you put into it...

                I hit my first market today and got all but one type of chile for the Oaxaqueno...girl you want to taste heaven ...this is it ...I am going to very carefully pay attention this time to what I put into it ...and then let you guys in on the secrets of the most amazing sauce on the planet OOOXXX

                dark ..rich ....smooth ...spicy .........soooooo goood!!!!!

                        Yeah, I hear ya. It's really odd how the latin cooking from the islands (Cuban, Puerto Rican, etc.) is so different from that of Latin America. Then the South American cuisine is completely different as well...kind of bland and uninteresting in my opinion.

                            I read this frigging thread everyday, knowing DARN WELL I can't even buy most of these ingredients where I live, and it's making me drool!

                            I've never had mole, but have seen it before, and now I am obsessed with finding some and eating it...

                              I bet you can too find the stuff where you live!!!! I know there are Mexican people there!!!!!

                              I am writhing over chiles and chocolate you know I want to dip everything I have in this sauce ..but I am using restraint ..patience Heidi all good things take time ....

                              let me post the list of stuff I have put in here now and if you can not find it locally I can tell you sources online ..but it sooooo much more passionate a final piece of art when you can go to a market where people make what you want to make and can tell you face to face....
