    Heidi I will definitely try! I live in a small town with NO Hispanic people. God I'd kill for authentic Mexican food, believe me.

    When I go shopping in the big city I will look for this stuff...

      here is the grocery list but not exact amts because I am not done make this yet!

      6 tomatillos (you could use canned I guess) but most big supermarkets have these
      2 ripe tomatoes
      1 giant yellow onion
      10 cloves of garlic (one of the few times I mix the two in cooking is a mole)
      2 ripe plantains (you could use a banana or sweet potatoe)
      6 dried chile negro
      6 dried ancho
      6 dried guajillo
      6 dried chipotle (if you can not find dried chipotles use the canned)
      6 dried pasilla
      (the chiles are the hard part but you can find most in larger supermarkets where you have a decent Mexican (not HIspanic or Latin actually but Mexican section) if not look for a Mexican Market that is called a "Tienda" sometimes they are tiny and hard to spot but most areas have them now ...cities all over have them as well and they are so fun to visit!!!... if they do not have the chiles this time of year I would be surprised this is the height of tomale and mole season!!! ...otherwise I can tell you how to get them online and they are not that expensive

      you can get the nuts and seeds at a health food store but what a rip off they are!!! ...you are better off looking in the bulk food section of the market and if you can not find these things there substitute any raw nuts you like and use peanut butter instead of peanuts...
      1 cup dried cherries (or raisins are more authentic I just like cherries better)
      1/2 cup raw whole almonds
      1/2 cup skinned peanuts
      1/2 cup raw pumpkin seeds (pepitas)
      1/2 cup raw sesame seeds
      1/2 cup raw shredded coconut

      3 cinnamon sticks
      1 tsp coriander seeds
      3 whole cloves
      1 tsp marjoram
      1 tsp thyme
      3 bay leaves or avocado leaves if you are lucky!
      at least 6 oz unsweetened chocolate Shaffenberger is wonderful but pricey so use Bakers if you want to

      2 quarts of chicken stock (any kind you like)
      1/2 bottle of good dry red wine
      1 cup of lard (ok if you are unable to stand it use olive oil .but come on all the best Mexican dishes are flavored with lard! and Crisco will kill us ...so try it!!!) "Manteca"
      or you could use coconut oil....that would be good I bet!

        honey if you want to learn authentic ...I can share some of the best and most authentic recipes I have ever found ..and trust me I have done my research!!!!

        there are so many variations of "real" Mexican cuisine depending on region and family heritage ...that I just feel so honored that I am able to explore this amazing world of cooking

        Mexican people cook with such a depth..the food is a very sensual art full of passion ...they create and put emotion into what is artwork not just food ...and I just get so excited when I find people who want to share my discoveries!!!!

          Holy cow! I'm going to have to do some serious shopping! I'll probably ttry this when I get some time...won't be right away, but I definitely will. Maybe a weekend when Katie comes up here and we want to just hang around the house. Thank you so much for all the information. I'll probably be hitting you up when I get ready for it! LOL!

          Now, off to make steaks with sauteed mushrooms!

                Unfortunately not as made here. The recipe that she provided originally would actually be ok without the seeds, right? But as she's stated, iut sounds like everything really needs to be in there.

                Was your shopping list just a shopping list or was that the list of ingredients for another recipe? I didn't see plantain in the recipe or anything. I love me some friend plantains, but there almost as bad as potato for me.

                  sigh....I figured I would loose you with that list .....mole is an event ...yes it did take most of one day to find all the stuff to make it then another to make it ..but for me that is the adventure of cooking wonderful food ...the process..

                  ...and it is crappy outside so it was fun for me to put my heart into this perfect sauce...besides ...my husband loves and I love making him happy...

                  however cooking for me is more fun than just about anything ..except watching people enjoy what I have prepared ...

                  with that in mind I am packing up the sauce that has simmed with shredded pork for hours...a pot of that is going to work with me for tomorrows 14 hour day! ...I get a huge kick out of watching my team enjoy imy cooking.....this is an awful time of year for us and time off is limited..so I enjoy bringing good food to work when all they have been eating is crap for weeks

                  honestly Higgies ..do not try to make this one unless you are really inspired and want to ...it is not easy and the results will not be what you want....you are actually better off asking your favorite restaurant to just sell you some of theirs and then use it at home to make what you want!!!

                    I hear ya Heidi! I really do want to do it. I love cooking, and I love this stuff...so I really will do it. I will however wait until an appropriate time when I have all my energy devoted to it as you say.

                    Now, so I take it your shopping list represented your entire fiesta, si?

                      nope just the sauce I got a huge pork roast and slow cooked it all day then shredded it and put it in the sauce and simmered it longer...that some garnishes like sour cream guac salsa (home made of course ) and shredded lettuce and cheese ...well it is not lunch time but folks are diving in now ...


                      I figure why stomp my passion/obsession for food ..I am embraced it and made it work for my body instead of against it! know what I mean?
