  • Turkey-Day leftover ideas?

    Anybody have some new ideas on what to do with all this turkey I have leftover?

    you can make turkey fajitas, soup, salad, freeze it in individual serving fro quick food for the rest of this hectic season, cajan it, saute it in rosemary olive oil or any flavored herb oil, make chili, omlettes, sandwiches, or just toss some in your garden salad. (can you tell i love turkey)

      Turkey pie: Chop your turkey in bit sized pieces. Simmer it in a bit of chicken stock (or turkey stock or leftover low carb gravy), remove from heat, add an ounce or two of cream cheese, stir until the cheese is dissolved. Pour into a butter casserole. Add leftover legal veggies, mix in. Top with shredded cheese or with leftover faux-tatoes. Bake until heated through and browned on top.

      Turkey cakes: Throw turkey in a food processor. Grind. Remove and add a egg or two, bit of chopped onion, garlic, whatever herbs and spices you want. Form into patties. Fry in oil or butter until golden on one side, flip and fry until golden on that side.

      Low Carb Hot Brown Sandwich: In a sauce pan, heat together some cream, water, and cream cheese. Stir until hot and the cream cheese is melted. Remove from heat add some parmesan cheese. Slice the turkey and place in a heat proof dish. Pour the cheese sauce over the top. Bake in the oven until the casserole is heated through. Remove from oven top with crispy bacon, eat with a fork. If you're at the phase in which you can eat low carb bread, you can layer the turkey on a slice of bread, pour on the sauce, bake and top with bacon. If you're not, then make a batch of Atkins Revolution Rolls or flax pancakes to use as the bread.

        Thank-you for the wonderful ideas. I hope I have enough turkey to try them ALL!
