  • Let's Talk Carrots

    Okay, I know a lot of people are not into carrots because of their glycemic impact (especially cooked - they're not too bad raw apparently)/natural sugar content, etc., but I have been tenatively introducing them into my diet in the form of shreds that come in my salads when I eat out (y'all know what I'm talking about) and the carrot slices in my inlaws' low-carb beef stew and so far, so good.
    I'm currently working on a broccoli-cheese soup with grated carrot shreds and small chunks of chicken breast in it. So far, it looks like it's going to be a cold and flu season favorite.

    I'm wondering if there are other carrot eaters out there. I'm striving to eat them on a regular basis to assess how I'm doing with them. I love pumpkin and sweet potatoes -- I have a soft spot for brightly colored veggies.

    So let me know if you have any recipes that use carrots or if you have a special way to fix them. (I've climbed all the OWL rungs and have also been occasionally eating small amounts of corn and green peas for about 5 months now, so I'm not overly restricted on ingredient choices.)

    I have been eating carrots also but only in things same as you. I have been on this WOE for so long tthat I felt guilty when I was making stew of the kids and popped one in my mouth. Then said Duh I can eat this if I count those carbs-lol. I think when I have time I am going to create a carrot/cocconut cake.

      One carrot goes a LONG way when you slice them up!!!

      mix and matching colors!!! my favorite way of getting all the nutrients I need with out adding a pill (I do not take supplements anymore since ..1 they upset my stomach 2 they are expensive and I am saving my pennies right now ( I am going to Cambodia and Laos whooo hooo!!!!) and 3 I eat a wide variety of almost everything again
      so make your plate a rainbow of nutritious colors by....slicing a carrot and ...

      add them to stir fry
      add them to curries
      add them to stews
      add them to soups
      roast them mixed with other veggies ....
      make creamy carrot soup
      grate them into salads or slaw

      enjoy your carrots!!!! orange foods are really good for you!!!!

          Oooo coconut/carrot cake, grated into slaws, carrot curries, as part of a stir fry (how had I forgotten that?), and creamy carrot soup!

            I was thinking carrot salad you know with the mayo, raisins, maybe even cut it with some slaw to cut the impact/carbs. My husband loves them just barely soft and glazed with a bit of burbon and sugar (can even use extract and splenda or even sf marmalade/jam). Can add them to shredded cauliflower like a fried rice, stuffed into a meat as a filling? Sweet and sour chicken with carrots.

              Wow, these are fantastic, thanks!

              I've had a lot of success so far, but you all KNOW how many carrots come in those bags at the store. I cook for 2 . Yeeeeesh... hehe. Good thing that my fridge is so cold it almost freezes things. I'm working with a pretty wide window here on veggie freshness.

              I'm definitely going to try a couple of the ones you posted, Sashie. The latke one looks really interesting.

                Carrots and celery are a marriage made in heaven. Diced and sweated together in olive oil or butter... yummmmm. Since Atkins, I've been going much heavier on the celery though when cooking them this way.

                  I eat so much sauteed celery!! My friends have told me that they think I'm insane!
