  • Salad Dressing Blahs.....Need recipes

    Hi All,
I'm just getting back started on my low-carb WOE, and I was looking for some salad dressing recipes. That was the hardest thing for me when I ate low-carb in 2004. I am NOT a fan of any oil & vinegar types of dressings. I made a low-carb honey mustard with splenda, but I got burnt out with it. Are there any really GOOD LC salad dressing recipes out there? I love Ranch. Does anyone have some to share?
Splenda is okay on induction, right?
    Thank you!
    Stephanie

I love Hidden Valley Spicey Ranch. I usually thin it with a bit of olive oil since olive oil is much better for you and you really cant tell a difference.

I don't like creamy salad dressings very much. But some people like the blue cheese dressings and we had one member who used mayonnaise thinned with alittle water or heavy cream.

You might want to try out those flavored olive oils too. Some of them are infused with garlic, herbs, lemon or orange oils, etc.

When you move to On-Going Weight Loss phase, you can make those very trendy salad dressings from pureed veggies like avocado or roasted red peppers.

        Green Goddesss

1 cup real full fat mayo (home made is better but your favorite store brand is fine)
        1/2 cup of sour cream
a huge bunch of washed fresh chives
        a big handful of parsley
        a tiny handful of cilantro
2 tble fresh squeezed (if you can get them Key limes are the best) lime juice or even sour orange juice is good...
3 anchovies either in oil drained and dried or if you can find them dried salted with the salt wiped off
kosher salt and fresh cracked pepper and a teaspoon of hot red chile or good fresh cayenne pepper ...or even smokey dried chipoltle ...mmmmmmm

        how to...

personally I love whisking things so I will toss the herbs in the food processor get them all chopped fine and then whip each thing in order above into a nice ceramic bowl ..when it is creamy ...thick and hits every part of my tongue with flavor ..I know it is done

but you can toss the entire thing in the blender or food processor ..it just will not have some your defining layers in it ..and to me that is what makes this so good ...is the layers of flavor you develop to make one wonderful sauce

OMG, green goddess is one of my faves. Saladworks actually makes a pretty good one, but yours looks great!

I usually buy Ken's--they have a great Northern Italian dressing, and a Buttermilk Ranch dressing that are both only 1g carbs per serving (2 tablespoons) and I'm a 1-tbsp-on-my-salad kind of girl. Yay to a 1/2 a carb!

My gosh Heidi, that dressing sounds totally droolworthy. I mean that as a compliment! It's making me drool because it sounds SOOOOOOOO good!

I wish I could find a good raspberry vinagrette that is low in sugar, or find a recipe to make my own...I think I will have to do some research on that...

            I'm also missing poppyseed dressing...<sigh>
