Just do a google search for crock pot recipes and you will come up with tons, use a little intuition and make some subs any most can be low-carb.

The beaty of the crockpot is how easy it is to experiment. Throw in a meat of some variety, some vegetables that do well slow-cooked, some herbs/spices of your choice, and maybe a little acid in the form of lemon juice/vinegar if it goes with waht you are cooking, and let it roll.

We use ours all the time. Unfortunately it is only for one thing - Chuck Roast. We probably make roast beef at least once a week. Sorry I couldn't be of more help with variety though.

          Here is my favorites:

          Crock Pot Italian Beef

          Ingredients:
          3 lb rump roast - (to 4)
          1 can tomato sauce - (8 oz)
1 = (no sugar added variety)
          2 1/2 cup water
          1 tsp salt
          1 tsp freshly-ground black pepper
          1 tsp parsley flakes
          1 tsp garlic powder
          1 tsp basil
          1 tsp oregano
          1 dash worcestershire sauce
          1 dash soy sauce
1 package italian salad dressing mix (good seasoning) * I use 1/2 to cut carbs

          Instructions:
Put roast in crock pot. Combine remaining ingredients in saucepan and cook
over medium-high heat until mixture comes to a full boil. Remove from
heat and pour over roast in crock pot.

Cook all night on Low or 6 to 8 hours on High. About 1 1/2 hours before
serving, flake meat apart and continue cooking.

This recipe yields 6 to 8 servings; about 1 carb gram per serving.
          Servings: 6

          GARLIC CHICKEN
          6 boneless chicken breasts
          1 teaspoon salt
          2 teaspoons paprika
          2 teaspoons pepper
          1 large onion, sliced, 5 1/4 ounces*
          10 cloves garlic, unpeeled*

Mix seasonings; rub all over chicken. Place onion in bottom of slow cooker. Place chicken on onion. Cover chicken with garlic cloves. Cook on LOW 6 hours or until chicken is done.

          Makes 6-12 servings

          * I used the onion the first time, did not like the way it came out, but overall was good. I may put the onions on top next time. Very flavorful and your house while smell yummy (if you like garlic like i do)

Calyn....I made your crockpot italian roast and it was DELICIOUS!!! I used a top round roast (i think) almost 4 lbs. I did brown it first, that's the only modication I made.

I would HIGHLY recommend this recipe!!! Very flavorful and the beef was tender. This, along with mashed fauxs was great!!!

No one said greens!!!...I love crock pot greens you can use nitrate free hocks or just make a veggie dish ....but collards are so good for you and they do well with long slow cooking and I just saute an onion, some garlic a hot pepper in olive oil...and one tomato then add the greens then some hot water and that is it turn on and leave...I have done curry greens this way as well......If I do not use a hock I use a Chipoltle pepper to get the nice smokey flavor in the pot!...kale is another good one ....make a Portuguese Kale soup!......with some chourico....I also make Kelp chowder with dried kelp ...people love it and never know it is seaweed!!...they keep looking for clams!!!..
