Mmmm...I love both. I love spinach salad with warm bacon dressing.
For zucchini, I love it sauteed in butter and garlic, grilled with olive oil, salt and pepper, spiral sliced into "spaghetti" and served with a little pesto or tomato sauce.
1 cup grated zucchini (I've used both a peeler and a cheese grater and both worked well)
1 tbsp grated onion
2 eggs, beaten
salt, pepper, onion powder, garlic powder to taste
oil to cook with (however much it takes)
Heat oil in a skillet. Mix ingredients in a bowl big enough to do it. Drop spoonfuls into hot oil in the skillet. Brown on one side, then flip and brown other side. Remove and put in plate.
I've made these a lot. They are easy and I really really enjoy them. You can melt cheese on them in the microwave, or put sour cream on them, or butter, or anything you like. I find them very comfort food-y.

This zucchini and jack cheese bake recipe from Linda's Low Carb ( http://www.genaw.com/lowcarb/ ) looks so good. I don't have a food processor though, so I've been holding off on making it quite yet... though I've been considering elaborate schemes involving my immersion mixer...
I cook sliced zucchini in butter and olive oil. It's just soooo yummy.
I've also cut it in half length wise and drizzled with olive oil and cooked it on a George Foreman grill, that's awful yummy too.
I also take a potato peeler and peel the entire zucchini into ribbons, steam it and then use the ribbons as "noodles" I've put tomato sauce or alfredo sauce (butter, parmesan, and cream) on it. That's very yummy as well.
Spinach--I eat it in salads, or cook it down and add some cream cheese to it for "creamed spinach"
