  • Low carb chocolate fudge/cheesecake

    I just made this for the first time--DANGER WILL ROBINSON! This stuff is DELICIOUS and probably not a good idea if your will power is weak or you are anywhere near induction, when you need to be getting as far from this sort of stuff as possible! However, all that said, I have gone over a year without a good yummy indulgence, I never had a problem with chocolate cravings, and so I decided to give this a try. It's *really* tasty, and I suspect that my stick-thin husband will devour most of it once he tries it, so I won't have to worry about rationing it to myself for long!

    To make it, you need:

    16 oz. cream cheese, softened
    2 oz unsweetened chocolate, melted and cooled
    1/2 C Splenda® sugar substitute
    1 teaspoon vanilla

    Line an 8-inch square baking pan with foil, waxed paper or parchment paper.

    In a small mixing bowl, beat the cream cheese, melted and cooled chocolate, sweetener, and vanilla until smooth. Pour into pan. Cover and refrigerate overnight. Cut into squares. Serve chilled.

    You can figure out the cream cheese carbs. I used Baker's unsweetened chocolate--the total chocolate in this recipe has 16 g of carbs, 8 g of dietary fiber, and 0g of sugar. Because of all the cream cheese, it tastes more like chocolate cheesecake filling than fudge to me. I don't know if you can freeze it or not. Of course you could add nuts, but that would also increase the carb content.

    I'M GOING TO TRY THIS. SOUNDS GOOD. I HAVEN'T HAD CHOCOLATE FOR ALMOST A YEAR NOW AND I AM BELOW GOAL. A PIECS NOW AND AGAIN WILL BE FINE.

      Let me know what you think. I am having a hard time staying out of it! DH is being "considerate" and not finishing it off as expected! I find that it is too soft to really cut into pieces and pick up, so I put a little on a plate and use a fork or spoon. (Then I put a little *more* on a plate....)

        HAVE YOU TRIED IT AS A PIE FILLING, MAYBE WITH A DOLLOP OF WHIP CREAM ON TOP?

          This would be excellent with some sort of crust under it, since it is so cheesecake-like. Never thought about whipped cream...yum...

            I HAVE A GIRLFRIEND WHO HAS BEEN DOING SUGAR BUSTERS FOR ALMOST A YEAR NOW. SHE IS AN EXCELLENT COOK AND I THINK SHE CAME UP WITH A "LEGAL" RECIPE FOR A CRUST. I'LL ASK HER ABOUT IT AND GET BACK WITH YOU. SHE DOES A LOT OF TRIAL AND ERROR STUFF TILL SHE COMES UP WITH SOMETHING GOOD.

                  My sister has several times, she even used the crushed nut crust on her pumpkin pie--no one knew the difference. I don't think it matters what kind of nuts, whatever you prefer--I think she used almonds, but macadamia's or walnuts or just about anyone would work just as well I'm sure. It would depend on your tastes!

                    Wow, tried this on the weekend. Pretty good taste, but way too heavy for me, even for a cheesecake filling. I think I'll stick with the regular baked Chocolate cheesecake.
