    Hey everyone! My lovely BFs birthday is this week. He is very sensitive to what I can and cant eat and is not fond of me making things for him that I cant have. (bless his lil heart!). I asked him this morning if he wanted me to make him a cake and he decided against that (even after I told him I knew I could find one that I can have too). Hes decided he didnt want my cheesecake either. (despite his love for it). So, hes decided that he wants brownies. the heavy thick fudgey ones. Anyone have a tried and true recipe for fudgey gooey heavy brownies? Im on the legumes rung. I have almond flour, soy flour, coconut flour, that great chocolate baking cocoa (the dark stuff), granulated splenda, etc etc at my disposal. Bonus points if i can make it in a small heart shaped or similar LITTLE pan andi ts a recipe that doesnt make a ton (IM having portion control issues as of alte but thats a whole other subject )

    He will eat anything. especially if I make it LOL

      Megs you rock. How much beans did you end up using in the very last post on the last page? (the black beans?)

      I found this on Stellas site. Any opinions from the good folks here on this recipe?

      2 sticks unsalted butter, at room temperature
      4 oz. unsweetened chocolate, melted and cooled
      1 cup Splenda
      4 large eggs
      2 teaspoons instant coffee granules
      1 1/2 teaspoons sugar-free vanilla extract
      1 1/2 teaspoons pure chocolate extract (optional)
      1 1/2 cups almond meal (finely ground almonds)
      6 tablespoons Dutch-processed cocoa powder
      1/4 teaspoons sea salt
      1 1/2 teaspoon baking powder

      The Low Carb Gourmet

      Makes 48 Brownies

      Preheat the oven to 350°F. Butter a 13 x 9-inch (32.5 x 22.5-cm) baking pan and line the bottom with parchment paper.

      In a large bowl, beat the cream cheese and butter until smooth. Beat in the chocolate and sweetener. Beat in the eggs, 1 at a time, scraping the bowl well after each addition. Add the coffee and extracts. Beat until combined.

      In a medium bowl, mix the almond meal, cocoa, salt, and baking powder. Add to the chocolate mixture and beat well. Scrape into the prepared pan and smooth the top.

      Bake for 35 to 40 minutes, until the top is firm. Cool on a wire rack before cutting. Store, covered, in the refrigerator.

      Effective carbohydrates: 1.5 g; Carbohydrates: 2.4 g; Fiber: 0.6 g; Protein: 2.1 g; Fat: 9.7 g; Calories: 99

        I used 1 can (15 oz I think) of black beans---make sure they aren't the seasoned black beans because there are some brands that have onion, garlic, etc. added to them.
