    Hi .. i am looking for a good home made mayonnaise recipe and wondered if anyone here would be so good as to share theirs with me!

      I use this recipe often and it keeps for a week or more in the refrigerator, in a sealed container. I got a version of it from a low-carb site, but can't remember which one anymore I make mine in my blender and I like to change the seasonings and experiment with different flavours, it's delicious.

      Mayonnaise
      1 whole egg
      1 egg yolk
      1/2 teaspoon dry mustard, optional
      salt
      pepper
      1 tablespoon lemon juice
      1 1/2 cups oil
      Put the chopping blade in your food processor and add everything except the oil. Process about 5 seconds.
      With the processor running, very slowly let the oil drizzle in a steady stream through the feed tube. Blend just until the mayonnaise is thick. For a creamier, thicker mayonnaise, blend an additional 2-3 minutes.

      Makes about 1 3/4 cups
      Per Tablespoon: 108 Calories; 12g Fat; trace Protein; trace Carbohydrate; trace Dietary Fiber; trace Carbs

          Cool...thanks for the recipe, I shall be making my own mayo from now on...I may only add a 1/2 t of splenda since it takes less to sweeten...awesome...I figured out the recipe above (the egg association one) and it is .35 grams of carbs per Tablespoon which is right on with the .37 grams of carbs that Fitday counts. I have had an awful time finding Mayo with out sugar or corn syrup...no wonder we're all addicted to sugar..they put it in everything don't they..

          anyway, thank you for the recipe. I have an old pickle jar that will be perfect for 1 and 1/4 cups...

          I wonder if I could create tartar sauce (for fish) the same way...using dill pickles instead of relish...just a thought!

            I made this last night!! How awesome! It's so cool making something like this and knowing everything you put in it. My first attempt was really bad...haha...added the oil to quickly, my son said....'drizzle does not mean POUR' haha..

            No corn syrup, no fructose, no sugar......woo hoo..........it's tastes so much better!

              Personally I like to add a bit of garlic, lemon juice, dill relish and sometimes a dash of franks hotsauce to my mayo for tarter sauce. I always have made my own even before atkins. I know some people like to add a bit of ketchup as well.

                  Scooter I am a bit puzzled by this, REAL mayonnaise doesn't have sugar/sweetener in it....

                    Actually, unless your lucky to find a brand I haven't, but Hellman's, Kraft, they all have Corn Syrup or Sugar in them. It may say 0 carbs...but believe me it isn't. So far I have yet to find a brand that doesn't have some type of sugar in it. Anybody know of any...

                      Dukes has no sugar, but I've only recently found it. I think it's a southern thing.

                        Thank you! Home-made is good, but I guess because of no preservatives, it's not too safe to keep it more than a week....I'll look for Dukes.

                          I tried making home made, and I didn't have any lemon juice so I tried using white balsamic vinegar (It's the only white kind I had). I knew better....It turned out awful. Blech. Next time I won't make home made mayo unless I have lemons! Lesson learned.

                            I did say REAL mayonnaise I don't touch the mass produced stuff they play around with it too much, and it tastes ....

                            Here is a recipe for the real stuff:

                            4 egg yolks
                            1/2 teaspoon white wine vinegar
                            1 teaspoon lemon juice
                            2 cups / 500ml extra virgin olive oil

                            Put eggs yolks, vinegar and lemon juice into a food processor, and whisk until light and creamy. Add the oil drop by drop, mixing continuously until the mixture begins to thicken, then add the oil in a thin stream (still mixing continously), season to taste. Good for 1 week.

                            Also here is a recipe for real Vinaigrette:

                            1 garlic clove crushed
                            1/2 teaspoon Dijon mustard
                            2 tablespoons lemon juice or white wine vinegar
                            1/3 cup/ 90ml extra virgin olive oil

                            Mix together the garlic, mustard and vinegar. Add the oil in a thin stream, whisking continously to form an emulsion. Season with salt and pepper. Store in screw top container in fridge, shake well before each use. Good for 1 week.

                            I believe one of the other Atkins Centre doctors, Fred Pescatore said it best, " we were advised to consume man-made atrocities that should never have been allowed to be called food."
