  • crockpot chicken

    I have 12 chicken legs and I'd like to cook them in the crockpot tomorrow while I'm at work. I can cook them from frozen state or thawed. I would also like to prepare them in a way that makes some sort of sauce/gravy so that i can make rice or pasta on the side for my boyfriend. Any ideas.

    I am not against this idea, but so far it hasn't worked for me.

    Last week I tried to make crock pot chicken carnitas, since I'd had so much success with crockpot pork carnitas. I threw a dozen chicken legs into the crockpot, set it on low, and poured in a bottle of low carb beer, and a few chopped jalepenos, and some crushed garlic. It took me a long time to fish out all the bones and gristle from the "stew" that was left in the pot by the time we were ready for dinner, about 8 hours after I turned the sucker on. It didn't work for me, but maybe someone else has a better idea.

      I frequently put chicken legs and thighs into a crockpot, put a small can (6 ounces) of tomato sauce (without added sugar) a small onion, green bell pepper, mushrooms. I typically do NOT add any water, add whatever spices you'd like.

      This will make a nice Chicken cacciatore type meal that can be served over rice for your bf, or on spaghetti squash or cauliflower "rice" is excellent.
